4 1/2 ounces fat free cream cheese, softened

Tips:

  • Choose ripe, juicy peaches: For the best flavour and texture, select peaches that are slightly soft to the touch and have a sweet aroma.
  • Use fresh, crisp lettuce: Spring mix, romaine, or a combination of your favourite greens will provide a crunchy base for the salad.
  • Toast the pecans: Toasting the pecans enhances their nutty flavour and adds a touch of smokiness to the salad.
  • Make a simple dressing: A light vinaigrette or honey mustard dressing is a great way to complement the flavours of the salad without overpowering them.
  • Assemble the salad just before serving: This will prevent the greens from wilting and the dressing from making the salad soggy.

Conclusion:

The Peachy Pecan Salad is a refreshing and flavourful side dish or light meal that is perfect for summer gatherings. With its combination of sweet peaches, crunchy pecans, and creamy goat cheese, this salad is sure to be a hit.
