2 1/2 cups crisp rice cereal (625 mL)
1 1/4 cups old fashioned oats (300 mL)
1 cup chopped mixed dried fruit (raisins, apricots, cranberries, dates and/or apples) (250 mL)
1 cup chopped peanuts (250 mL)
3/4 cup Skippy Creamy Peanut Butter (175 mL)
3/4 cup firmly packed brown sugar (175 mL)
3/4 cup light corn syrup (175 mL)
1/2 cup unsweetened cocoa powder (125 mL)

Steps:

  • Line 13x9x2 inch (3.5 L) baking pan with aluminum foil; set aside. In a large bowl, combine the cereal, oats, dried fruit and peanuts; set aside. In a small saucepan, cook the peanut butter, sugar and corn syrup over medium heat, stirring frequently, until smooth. Stir in cocoa powder. Pour over cereal mixture and mix well. 10.5 ounce package of miniature marshmallows
1/4 cup unsalted butter
1/2 cup smooth peanut butter
5 cups Rice Krispies cereal
1 cup raisins
1 cup peanuts
1 cup plain M&Ms

Steps:

  • Lightly grease a 9 by 13 inch baking pan and line with waxed paper. Set aside. Combine the marshmallows and the butter in a large microwave-safe mixing bowl. I've reduced the sugar significantly and substituted ingredients that I commonly have on hand for some of the original. Very tasty! 3 c crispy oats cereal(like cheerios)
3 c crispy rice cereal(like rice crispies)-i use a brown rice version
1 1/2 c raisins
1/2 c rolled oats
1/2 c chopped peanuts
1 c honey
1/4 c sugar(i use sucanat or turbinado)
1 tsp vanilla
1 16oz. jar natural peanut butter
3/4 c chocolate chips

Steps:

  • 1. Combine first 5 ingredients in large bowl. Combine the honey and the sugar in a saucepan and heat on med. til boiling. Cook and stir 1 min. Remove from heat and stir in vanilla and peanut butter. Pour over ingredients in bowl and quickly stir to combine. Let cool slightly(about 2 min.), then stir in chocolate chips. Press into buttered 11x15 pan. Let cool til set then cut into squares.

  • For a chewier bar, use 1 cup of peanut butter instead of 1/2 cup.
  • If you don't have honey, you can substitute maple syrup or agave nectar.
