Steps:
- For the pear vinaigrette: Heat the pear juice on stovetop over medium heat to reduce to 1/4 of its original amount, for 40 minutes, until caramelized. Set aside and let cool.
- In a bowl, mix the reduced pear juice, cider vinegar, maple syrup, and Dijon mustard. Slowly add the canola oil whisking constantly. Season the vinaigrette with salt, and pepper, to taste. Add a little more pear juice or water if the vinaigrette is too thick. Set aside.
- For the salad:
- In a pan, add the olive oil and toast the pine nuts on medium-high heat. Keep an eye on them because they tend to burn fast.
- Place the endives and grapes in a bowl, add the vinaigrette and mix well. Transfer the salad mixture in the serving bowls and garnish with pears, pine nuts and cheese.

Tips:
- Choose the right pears and grapes: Use ripe, firm pears that are not too soft. For grapes, choose a variety that is sweet and juicy, such as red grapes or green grapes.
- Slice the pears and grapes evenly: This will help them cook evenly and look more appealing in the salad.
- Use a variety of nuts: Walnuts, pecans, and almonds are all great options for this salad. You can also use a mix of different nuts.
- Toast the nuts: Toasting the nuts will bring out their flavor and make them more crunchy.
- Use a light dressing: A vinaigrette or a light citrus dressing is a good option for this salad. Avoid using a heavy dressing, as it will weigh down the salad.
- Serve the salad immediately: This salad is best served immediately after it is made. The pears and grapes will start to brown if they sit for too long.
Conclusion:
Pear and grape salad is a refreshing and flavorful salad that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a variety of tips and tricks, you can create a delicious and healthy pear and grape salad that everyone will love.
