Time 1h

Number Of Ingredients 5

4 c cranberries ( about 1 pound) picked over
2 c white sugar
1 c fresh orange juice or your favorit carton brand
1 Tbsp finely grated orange zest
2 slightly under-ripe pears

Steps:

  • 1. when choosing pears either anjou or bosc will do anjou pears are juicier. you will need to core, peel and cut them into 1/3 inch dice
  • 2. Combine all ingredients in a heavy saucepan and stir well. Place pan over medium heat and boil until berries pop open Skim the foam off the surface with a metal spoon and let the relish cool to room temperature. Refrigerate, covered, for up to 2 months. Makes 10 servings.
  • 3. Tips: I still have some left in my fridg now its been 3 months and it is still good. I have also added apples to the mixture, I do normally just buy enough oranges to get the required zest you need it might take like 4 depending on the size make sure the oranges skins are not anything less then perfect as you will be eating this and really give them a good scrub with soap & rinse, then I add a box oj to make up the difference, as long as your pan is large enough you can double tripple this I promise you your cranberry jelly haters will love this dish, update lately I have been adding a lot less sugar for obvious reasons and it was well received.

PEAR RELISH

Pear Relish image

This is a great topping for hot dogs, or even tortilla chips. A great way to use extra pears.

Provided by Travis Deck

Categories     Side Dish     Sauces and Condiments Recipes     Relish Recipes

Time 3h10m

Yield 192

Number Of Ingredients 9

12 large pears
3 large onions, coarsely chopped
3 large green bell peppers, seeded and coarsely chopped
4 jalapeno peppers, coarsely chopped
2 cups apple cider vinegar
2 cups white sugar
9 ounces prepared mustard
1 tablespoon salt
10 (1 pint) canning jars with lids and rings, or as needed

Steps:

  • Place pears into a large stock pot, add water to cover, and boil until tender, about 20 minutes. Drain and cool. When pears are cool, peel, core, and coarsely chop.
  • Place pears, onions, green bell peppers, and jalapeno peppers into a food processor, working in batches if necessary, and chop the pears and vegetables finely. Transfer pears and vegetables, including any juice, to a large pot.
  • Stir vinegar, sugar, prepared mustard, and salt into the pear mixture and bring to a boil; reduce heat to medium-low and simmer until flavors have blended and relish is thickened, about 1 hour.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack pear relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for about 20 minutes or the amount of time recommended for your area.
  • Remove the jars from the stockpot and cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Tips:

  • Choose ripe, firm pears: Use pears that are ripe but still firm, as they will hold their shape better in the relish.
  • Use a variety of pears: For a more complex flavor, use a combination of different types of pears, such as Bartlett, Bosc, and Anjou.
  • Add some heat: If you like a little spice, add a pinch of cayenne pepper or a chopped chili pepper to the relish.
  • Experiment with different flavors: Add other ingredients to the relish to create different flavor combinations, such as ginger, garlic, or fresh herbs.
  • Use a good quality vinegar: The type of vinegar you use will have a big impact on the flavor of the relish. Use a vinegar that is flavorful and has a good acidity, such as apple cider vinegar or white wine vinegar.
  • Store the relish properly: Once the relish is made, store it in a clean, airtight jar in the refrigerator for up to 2 weeks.

Conclusion:

Pear relish is a versatile condiment that can be used in a variety of ways. It is a great addition to sandwiches, burgers, and salads. It can also be used as a dipping sauce for appetizers or as a glaze for grilled meats. With its sweet and tangy flavor, pear relish is sure to add a delicious touch to any dish.
