EASY PEAR LIME JELL-O SALAD

Steps:
- Pour lime gelatin into a clean glass mixing bowl. Add 2 cups hot water; stir for 2 minutes or until gelatin is completely dissolved.
- Using a colander, drain the pears and reserve the juice.
- Add 3/4 cup cold water and the pear juice (should be around 3/4 cup of juice) to the gelatin mixture; stir.
- Chop pears into bite-sized segments and gently stir them into the gelatin. Refrigerate until the gelatin is fully set.
- Use a large spoon and stir the gelatin until it is in small clumps. Stir in whipped topping. Serve.
- Refrigerate leftovers.

A nice light dish that can serve as either salad or a dessert. Low in calories, and easy. One of my favorites! You can of course substite jello favors and type of you don't like the sugar free stuff. And the choice of fruit is open as well!

- Place the jello in a meduim mixing bowl (I just use a cleaned out cool whip container), add one cup boiling water. Stir till dissolved, at least 2 minutes.
- Add ice water, stirring well.
- Place in refridgerator till semi-jelled.
- Add pears and cottage cheese, stirring to combine.
- Chill until firm.

An old fashioned Jello salad that is also great for a light dessert. I changed it a little from the original in the matter of adding a little zip to it with different & extra spice & subbing lime juice for the original lemon juice

- Drain pears, reserving 3/4 cup of the syrup; coarsely chop pears and set aside.
- Dissolve jello in boiling water; add pear syrup and lime juice; measure 1 1/4 cups into an 8X4 loaf pan or a 4 cup gelatin mold- chill until set but not firm- about one hour.
- Meanwhile, slowly (to prevent lumps) blend remaining gelatin into the softened cream cheese; beat until smooth then blend in spices and chopped pears.
- Pour over set gelatin in refrigerator and let finish firming up in fridge, about four hours.
- Note- This can be made with pears in syrup; doing that makes it sweeter and more of a dessert dish which is how we prefer it here at my house.
