Posting this for a Zaar friend who needs low sugar recipes but loves coconut! Hope she can tweak this for her dessert recipes.

Number Of Ingredients 4

1 cup graham cracker crumbs
1/2 cup chopped pecans
1/2 cup unsweetened flaked coconut
3 tablespoons butter or 3 tablespoons margarine

Steps:

  • Preheat oven to 350 degrees F.
  • Place graham cracker crumbs, pecans and coconut flakes on a cookie sheet.
  • Place in oven for 15 minutes, stirring every 5 minutes.
  • Remove the crumb mixture and let cool.
  • In medium bowl, melt butter in microwave, about 30 seconds depending on your microwave.
  • Add crumb mixture to butter and mix together well making sure butter is well incorporated.
  • Use as crust for your favorite cheesecake, torte or cream pie.

EASY PECAN GRAHAM BARS

These bars taste a lot like pecan pie and are so easy to make. I got this recipe from a fellow worker, whose grandmother makes them every Christmas--delish!!! Very few ingredients, and not time consuming. Enjoy!!!!

1 cup margarine
1 cup brown sugar
1 cup pecans, chopped
20 graham cracker squares

Steps:

  • Line ungreased cookie sheet with graham cracker squares.
  • In saucepan, melt margarine and brown sugar.
  • Bring to rolling boil and boil for 2 minutes.
  • Stir in chopped pecans.
  • Pour over graham crackers and spread evenly.
  • Bake in 350° oven for 10 minutes.
  • Allow to cool, and break squares into halves.
  • Enjoy!

1/2 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup graham cracker crumbs
1 cup ground pecans
54 to 60 pecan halves

Steps:

  • In a bowl, cream shortening and sugars. Add egg and mix well. Combine flour, baking powder, baking soda and salt; add to the creamed mixture. Stir in cracker crumbs and ground pecans; mix well. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Place a pecan half in the center of each cookie; press down lightly. , Bake at 350° for 9-11 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

12 whole graham crackers
1/2 cup butter, cubed
1/2 cup packed brown sugar
1/2 cup finely chopped walnuts

Steps:

  • Line a 15x10x1-in. baking pan with heavy-duty foil. Break the graham crackers at indentations; place in a single layer in pan. , In a small saucepan, combine butter and brown sugar. This homemade toffee candy has a crunchy graham cracker base and topping of pecans and melted chocolate. It's a sweet treat that makes a great holiday gift.

Yield Makes about 1-1/4 lb. toffee or 14 servings.

12 graham crackers, broken into squares (24 squares)
1 cup sugar
1/4 cup butter or margarine
1/4 cup water
1/4 tsp. salt
1/4 tsp. baking soda
1 cup chopped pecans
3 oz. BAKER'S Semi-Sweet Chocolate

Steps:

  • Arrange graham squares on bottom of 15x10x1-inch pan sprayed with cooking spray.
  • Cook and stir sugar, butter, water and salt in medium saucepan on medium-high heat until mixture reaches 300°F on candy thermometer (hard-crack stage) or until small amount of mixture dropped into cold water separates into hard brittle strands. Remove from heat; stir in baking soda. Immediately pour over grahams; spread to evenly cover grahams.
  • Sprinkle with nuts; cool. Melt chocolate as directed on package; drizzle over toffee. Let stand at room temperature until firm. Break into pieces.
