1 large navel orange
2 tablespoons fresh basil, finely minced
2 tablespoons olive oil
1 pinch black pepper
16 large mussels, scrubbed and beards removed
1/3 cup water
1 tablespoon shallot, finely minced
fresh basil leaf

Steps:

  • Grate the orange rind and reserve.
  • Cut 1 thin slice from the middle of the orange and cut it into little triangles; reserve.
  • Juice the remaining orange.
  • In a large skillet that has a lid, mix the minced basil, oil, pepper, mussels, water, shallots, orange juice and half the grated rind. Cover the pan and bring to a boil and steam for a few minutes until the mussels open.
  • Remove the mussels with a slotted spoon and toss the ones that didn't open.
  • Place them on plates lined with fresh basil leaves. Garnish with orange triangles. Sprinkle the remaining orange rind on top.
  • Pour the cooking broth into a small dishes, to dip mussels into.

0.5 (12 ounce) package rice paper sheets
1 (1 1/2 ounce) package cellophane noodles
1 head butter lettuce, roughly chopped
1 bunch basil, stems removed and torn into pieces
1 bunch cilantro, stems removed and roughly chopped
1 bunch mint, stems removed and torn
2 cups carrots, cut into matchsticks
1/2 lb cooked shrimp, shell-off and cut in half lengthwise

Steps:

  • Bring water in a medium saucepan to a rapid boil.
  • Submerge cellophane noodles in water until just softened, about 30-45 seconds.
  • Remove and reserving hot water, drain.
  • Pour the reserved hot water into a wide, shallow pan (pie pan, casserole dish, etc.).
  • Assemble all cold/salad ingredients including the shrimp and the cooked cellophane noodles in an assembly line format around an open, flat surface such as a cutting board.
  • Place one dried rice paper wrapper into the warm water for a few seconds or until softened. Remove promptly or it will get soggy. Remove, let the water drip off and place on the cutting board.
  • Fill with all ingredients, being careful not to overfill.
  • Roll it up like a burrito (fold bottom over filling, then tuck each side in, then complete roll to form a neat, tight package), cut diagonally to create two halves and serve immediately.

2 cups boiled rice
2 cups raw rice
3/4 cup split white lentils (urad)
1 tablespoon dry yeast or 1/2 bottle toddy
3 tablespoons sugar (or to taste)
1 cup coconut milk
salt

Steps:

  • Wash and soak each of the each kind of rice and the lentils overnight or for 8 hours, separately.
  • Then grind all the three together to a fine paste with the coconut milk.
  • Put the dry yeast in a bowl with sugar and 3 tablespoons warm water.
  • When it froths, add it to the ground batter.
  • Add salt to taste and keep aside for 5 hours till it doubles in quantity.
  • Get the steaming vessel ready on medium flame with the required amount of water in it.
  • Put a tablespoonful of the batter into each of the moulds/ aluminuim bowls and steam on medium heat till the sannas are fluffy and done right through (around 15 mins) or when a skewer pierced into one comes out clean.
  • All of them may not go into the steamer in one round so do them in batches.
