THE ORIGINAL RICE KRISPIES TREATS SQUARES
This is the recipe for the original rice krispies treats squares...It never fails! Plus, it is a great way to use up a box of cereal! For best results, use fresh marshmallows. I have replaced the butter once with Mott's Healthy Baking butter or oil substitute (it was basically an unsweetened apple sauce) and they still turned out great!

Steps:
- Melt butter in a large saucepan over low heat.
- Add marshmallows and stir until completely melted.
- Remove from heat.
- (It would be perfect to be measuring out all of the cereal at this time, having it ready in a large bowl.).
- Working quickly, add rice krispies cereal, and stir until the cereal is well coated.
- Using a buttered spatula or waxed paper, press the mixture evenly into a greased 13 by 9 by 2 inch pan (or whatever pan you have on hand).
- When the treats are cooled, cut into squares.
- Serve, and enjoy!

- Butter a 9x13 inch pan (or spray with pam) In a microwave safe bowl, combine butter and marshmallows and heat on high for 2 - 3 minutes. Remove from microwave and stir to combine. Add 6 cups of Rice Krispies Cereal Mix thoroughly with a buttered spatula to ensure all cereal is evenly covered. Butter your hands and press into pan. Top with crushed peppermint candy canes and press into Rice Krispies. Allow to cool and devour!

PEPPERMINT RICE KRISPIES CANDY
I often made this variation of the familiar candy as a Christmas treat for my second grade classes at school. It's a great way to use up candy canes. I liked best to press the mixture out to a thickness of 1/2- to 3/4-inch. I chose outline type cookie cutters to cut into individual pieces. The new Comfort-Grip cutters from Wilton are ideal for this. Wish I'd had them then!

Steps:
- Make the basic Rice Krispie Candy recipe: Melt butter, marshmallows, and vanilla over a double boiler. Add a drop or two of peppermint extract and red food coloring to tint a nice pink color. At this stage, the pink color should not be too delicate because it will not show up at all when the cereal is mixed in .
- Put Rice Krispies in a large buttered bowl. Pour marshmallow mixture over and stir to mix. Add crushed peppermint candy canes and mix in .
- You may press this mixture into a buttered 9- x 9- x 2-inch pan and cut into bars. Or with well-buttered hands, you may shape portions of the mixture into candy cane shapes. Or you may pat thin and cut with cookie cutters as described above.
