PERFECT CAESAR SALAD

Perfect Caesar Salad image

If you don't have a large wooden bowl, the garlic and salt can be mashed into a paste on a cutting board using the side of a chef's knife.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 3h

Yield Serves 4 to 6

Number Of Ingredients 12

2 romaine hearts (about 7 ounces), leaves separated
2 garlic cloves, peeled and smashed
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter, melted
1/3 cup plus 2 tablespoons extra-virgin olive oil
1/2 rustic Italian loaf (about 1/2 pound), crusts removed, cut into 1/2-inch cubes (4 cups)
1 cup finely grated Parmigiano-Reggiano cheese (3 1/2 ounces)
5 oil-packed anchovy fillets
2 tablespoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1 large egg yolk

Steps:

  • Preheat oven to 400 degrees.
  • Submerge romaine leaves in a large bowl of ice water for 10 minutes. Then thoroughly dry in a salad spinner or colander, and place in a single layer on a paper towel-lined dish cloth. Roll up cloth; refrigerate until lettuce is crisp and completely dry (any water clinging to leaves may cause the dressing to break), at least 2 hours and up to 2 days.
  • Place garlic in a large wooden bowl, add 1/4 teaspoon salt, and mash to a paste with a fork. Transfer half of paste to a rimmed baking sheet; set bowl aside. With the fork, stir butter and 2 tablespoons oil into garlic paste on sheet. Toss with bread cubes to evenly coat. Sprinkle with 1/4 cup cheese, season with salt and pepper, and toss again to evenly coat. Spread into a single layer. Bake, stirring halfway through, until crisp and golden, 12 to 15 minutes. Let cool to room temperature on sheet.
  • Add anchovies to bowl with garlic paste and mash to a paste with a fork. Whisk in lemon juice, Worcestershire, Dijon, and egg yolk. Season with 1/4 teaspoon each salt and pepper. Slowly add remaining 1/3 cup oil in a thin stream, whisking constantly. Add lettuce and toss to evenly coat, then toss with remaining 3/4 cup cheese and croutons. Serve immediately.

PERFECT CAESAR SALAD

Perfect Caesar salad image

The ultimate New York salad with crunchy croutons, anchovies, crisp gem lettuce and a thick garlicky dressing, this recipe comes from The Breslin's brilliant chef April Bloomfield

Provided by Emma Freud

Categories     Lunch, Side dish

Time 25m

Number Of Ingredients 9

225g day-old rustic Italian bread , crusts discarded and bread torn into bite-sized pieces
10 anchovy fillets , plus extra to serve
60ml red wine vinegar
3 tbsp Dijon mustard
2 garlic cloves
1 large egg
240ml vegetable oil
30g grated Parmigiano-Reggiano , plus extra shaved to serve
4 Little Gem lettuces , leaves separated and chilled

Steps:

  • Heat oven to 200C/180C fan/gas 6. Spread the bread out on a baking tray and bake for about 12 mins until golden and crisp, then leave to cool.
  • Meanwhile, in a food processor, combine the 10 anchovy fillets with the vinegar, mustard and garlic, and purée until smooth. Add the egg and pulse until just incorporated. With the machine on, gradually drizzle in the vegetable oil until it emulsifies to create a creamy dressing. Scrape the dressing into a bowl and stir in the cheese. Season, cover with cling film and put in the fridge until well chilled and thickened, at least 30 mins.
  • In a very large bowl, toss the chilled lettuce leaves with half the dressing, gently rubbing the dressing onto the leaves with your hands. (Save the remaining dressing for another salad or to serve with grilled chicken.) Divide the dressed lettuce between chilled bowls and scatter the croutons on top. Garnish with anchovy fillets and serve right away, passing round the extra cheese at the table.

Time 15m

Yield 20

Number Of Ingredients 9

1 ½ cups olive oil
1 tablespoon red wine vinegar
¼ cup lemon juice
1 tablespoon Worcestershire sauce
2 tablespoons anchovy paste
½ teaspoon mustard powder
4 cloves garlic, crushed
3 tablespoons sour cream
½ cup grated Parmesan cheese

Steps:

  • In a food processor or blender, combine the olive oil, vinegar, lemon juice, Worcestershire sauce, anchovy paste, mustard, garlic, sour cream and Parmesan cheese. Process until smooth. Pour into a glass container, seal, and refrigerate until ready to use.

Nutrition Facts : Calories 164.6 calories, Carbohydrate 1.3 g, Cholesterol 3.9 mg, Fat 17.4 g, Protein 1.4 g, SaturatedFat 3 g, Sodium 235.4 mg, Sugar 0.2 g

Tips:

  • Always use fresh ingredients, especially the romaine lettuce and Parmesan cheese. Freshness will greatly enhance the flavor of your dressing and salad.
  • To make sure your dressing emulsifies properly, use a blender, food processor, or immersion blender. You can also whisk it by hand, but it will take a lot longer and you may not get the same smooth consistency.
  • If you don't have anchovies, you can substitute Worcestershire sauce. However, the anchovies do add a unique flavor to the dressing, so if you can find them, it's worth using them.
  • Don't skimp on the Parmesan cheese. It's one of the key ingredients in Caesar salad dressing and it adds a lot of flavor.
  • If you're using a store-bought Caesar salad dressing, be sure to taste it before you add it to your salad. Some store-bought dressings can be quite salty, so you may need to adjust the amount you use.
  • For a healthier Caesar salad dressing, use Greek yogurt or avocado instead of mayonnaise. You can also use a light olive oil instead of regular olive oil.
  • To make a Caesar salad with grilled chicken, simply grill some chicken breasts or thighs and add them to your salad. You can also use leftover chicken from a roasted chicken.
  • If you're making a Caesar salad for a crowd, you can prepare the dressing and croutons ahead of time. Just store them in the refrigerator until you're ready to serve.

Conclusion:

Caesar salad is a classic dish that's perfect for any occasion. It's easy to make, delicious, and can be tailored to your own taste preferences. With a few simple ingredients and a little bit of time, you can create a Caesar salad that will impress your friends and family.
