This is my family's favorite recipe! Please experiment with the ingredient amounts. Maybe you will want yours extra cheesy! I have used instant potatoes but no comparison to them roasted. Well worth the effort and a wonderful comfort food. Serve with bread and salad-the perfect meal!

12 lasagna noodles
5 pounds potatoes
4 cups shredded Cheddar cheese
4 cups cottage cheese
2 eggs
salt and pepper to taste
1 pound bacon, sliced
2 onions, chopped
2 tablespoons margarine

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
  • Roast potatoes in oven for about 1 hour. Split potatoes and scoop out middle; discard skins. Mix Cheddar cheese into potatoes. In a bowl, blend together cottage cheese, eggs, salt and pepper; set aside.
  • Layer lasagna noodles in a 9x13 inch baking dish. Spread cottage cheese mixture over noodles. Layer noodles again and spread potato and cheese mixture to cover noodles. Smooth top.
  • In a skillet, fry bacon until half way cooked. Spread over top of casserole. Sprinkle onions on top. Dot casserole with margarine.
  • Lower oven temperature to 350 degrees F (175 degrees C) and bake for 45 minutes.

This recipe came from the back of a Permo (TM) Perogie bag. I've modified it to work for me. I love it because it tastes delicious, and tastes great.

8 Cheemo perogies
2 cups healthy choice chunky lovers pasta sauce
1/8 cup kraft 100% parmesan grated cheese
1/2 cup grated cheddar cheese
4 slices salami or 4 slices summer sausage

Steps:

  • Preheat oven to 350°F.
  • Place perogies at the bottom of a pie plate or casserole dish.
  • Cover with pasta sauce.
  • Chop the meat slices into little bits and cover the pasta sauce.
  • Spread Parmesan cheese on top, followed by the cheddar.
  • Place in oven and bake for 20 minutes.
  • Take out and let cool for a couple minutes than enjoy!

4 C hot mashed potatoes
1/2 C (1/2 of a 250g tub) herb & garlic cream cheese spread
6 green onions, thinly sliced
1 pkg (80g) bacon pieces, divided
2 C shredded cheddar cheese, divided

  • Heat oven to 375. Cook noodles as directed on package, omitting salt. Meanwhile, combine mashed potatoes, cream cheese spread, onions, 1/2 C bacon & 1 C cheddar cheese. Place 3 noodles in a 13 x 9 inch baking dish sprayed with cooking spray; cover with 1/3 of the potato mixture. Repeat layers twice. Top with remaining bacon & cheddar cheese; cover. Bake 30 mins, or until heated through. Uncover, bake 3-5 min or until cheddar cheese is lightly browned. Let stand 10 mins before cutting to serve.
