Tips:
- Choose ripe persimmons: Look for persimmons that are soft to the touch and have a deep orange color. Avoid persimmons that are still hard or have green spots.
- Use a food processor or blender: This will make it easy to puree the persimmons and other ingredients until smooth.
- Don't overmix the batter: Overmixing can make the bars tough. Mix just until the ingredients are combined.
- Bake the bars until they are just set: The bars should be slightly firm to the touch, but not dry. Overbaking will make them dry and crumbly.
- Let the bars cool completely before glazing: This will help the glaze to set properly.
- Use a sharp knife to cut the bars: This will help to prevent them from crumbling.
Conclusion:
These persimmon bars with lemon glaze are a delicious and easy-to-make treat. They are perfect for a snack or dessert, and they can also be made ahead of time and frozen. The combination of sweet persimmons, tangy lemon glaze, and buttery crust is sure to please everyone. So next time you have some ripe persimmons, be sure to try this recipe!
