Time 1h40m

Yield 8 serving(s)

Number Of Ingredients 6

4 seedless English cucumbers, thinly sliced
4 vine-ripened tomatoes, diced
1 onion, thinly sliced
1 cup apple cider vinegar
1/2 cup granulated sugar
2 (12 ounce) jars herring fillets, pickled in wine sauce (such as VitaR)

Steps:

  • Combine cucumbers, tomatoes, and onion in a large glass mixing bowl.
  • Stir vinegar and sugar together in a small saucepan over medium-low and bring to a boil; cook and stir until the sugar dissolves.
  • Pour over the vegetable mixture. Marinate mixture in the refrigerator for 30 minutes.
  • Stir the reserved liquid from the herring into the vegetable mixture. Fold herring into the vegetable mixture. Refrigerate 1 hour more before serving.

Tips for Making Pickled Herring Salad:

  • Choose the right herring. Look for firm, fleshy herring fillets that are free of bones and skin.
  • Soak the herring in milk or water. This will help to remove the saltiness and make the herring more tender.
  • Use a variety of vegetables. This will add color, flavor, and texture to the salad.
  • Don't overcook the vegetables. They should be crisp and tender.
  • Use a light dressing. A simple vinaigrette or mayonnaise-based dressing is all you need.
  • Serve the salad chilled. This will help to keep the flavors bright and refreshing.

Conclusion:

Pickled herring salad is a delicious and versatile dish that can be enjoyed as an appetizer, main course, or side dish. It is a great way to use up leftover herring, and it is also a good source of protein and omega-3 fatty acids. With a little planning and preparation, you can easily make this classic salad at home.
