oil (for frying)
12 ounces peeled fresh pineapple, cored and cut into chuncks
1 onion, chopped into wedges

1 teaspoon honey (only necessary if the pineapple is too tart)
12 ounces green cabbage, chopped
salt and pepper

Steps:

  • Heat about a tablespoon of oil in a large skillet. Add the pineapple chunks to the hot oil, stirring so they don't burn ( you do want the pineapple to brown slightly).
  • Add the onion, herbs and peanuts and fry for 2 more minutes. Taste the pineapple and add the honey if you need to at this time.
  • Toss in the cabbage and sprinkle on a little salt and pepper. Stir for about 4-6 minutes until the cabbage is linghtly cooked. Then serve with rice.

Provided by Paula Kittelson

Categories     Side Dish

Time 40m

Yield 6

Number Of Ingredients 10

1 large (3 1/2 lb) cabbage, cut into 1-inch cubes
1/2 cup sesame oil
1/2 cup thinly sliced gingerroot
6 large cloves garlic, peeled and thinly sliced
2 teaspoons sesame seed
3 cups chopped fresh pineapple
1/3 cup chopped Fresh green onions
1/2 cup golden raisins
2 tablespoons rice vinegar
Salt to taste

Steps:

  • In large bowl, put chopped cabbage; set aside.
  • In 1-quart saucepan, heat sesame oil over medium heat. Add gingerroot, and fry until golden brown. Transfer cooked ginger to small bowl. Add garlic to hot sesame oil. When garlic is starting to turn golden in color, add sesame seed, and cook until garlic and sesame seed are golden brown.
  • Immediately pour hot sesame oil, garlic and sesame seed over cabbage. Add fried ginger, and stir to combine. Stir in pineapple, scallion, raisins and rice vinegar. Season with salt. Serve salad at room temperature.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Choose ripe pineapple: Look for pineapples with a golden-yellow color and a sweet, fragrant smell. Avoid pineapples that are green or have brown spots.
  • Use fresh cabbage: Fresh cabbage has a crisp texture and a mild, slightly sweet flavor. Avoid cabbage that is wilted or has brown spots.
  • Cut the pineapple and cabbage thinly: This will help them cook evenly. Aim for thin slices or shreds.
  • Use a large skillet or wok: This will give the pineapple and cabbage plenty of room to cook without overcrowding.
  • Cook over medium-high heat: This will help the pineapple and cabbage cook quickly and evenly.
  • Stir the pineapple and cabbage frequently: This will prevent them from sticking to the pan and burning.
  • Season to taste: Add salt, pepper, and other spices to taste. You can also add a splash of soy sauce or rice vinegar for extra flavor.
  • Serve immediately: Pineapple and cabbage saute is best served hot and fresh. It can be served as a side dish or as a main course with rice or noodles.
