PINEAPPLE, MANGO, AND MEYER LEMON SALAD
The classic pairing of pineapple and coconut goes even more tropical with juicy mango. Meyer lemons, which have a sweet-tart flavor, are so delicate they can go in skin-on.

MEYER LEMON VINAIGRETTE
When Meyer lemons are in season, typically between November and March, be sure to snag some up to make this lemon-Parmesan dressing. Meyer lemons are much less tart and acidic than traditional lemons, like a cross between a lemon and a mandarin. They're also sweeter, so no additional sugar is needed. I love this on kale salad, but also drizzled over roasted veggies or grilled salmon or trout.

Tips:
- Use fresh fruits: Fresh pineapple, mango, and Meyer lemons will give your salad the best flavor. If you can't find fresh Meyer lemons, you can substitute regular lemons, but the flavor will be slightly different.
- Cut the fruit into small pieces: This will make it easier to eat and will help the flavors to meld together.
- Don't overdress the salad: A little bit of dressing goes a long way. You want the flavors of the fruit to shine through, not be masked by the dressing.
- Serve the salad chilled: This will help to keep the fruit crisp and refreshing.
Conclusion:
This pineapple, mango, and Meyer lemon salad is a delicious and refreshing way to enjoy fresh fruit. It's perfect for a summer party or potluck, or as a light lunch or snack. The combination of sweet and tart flavors is sure to please everyone at your table.
