I found this recipe many years ago and my family loved it and so i've been making it ever since.

2 lb lean ground beef
1/4 c minced onions
1 tsp italian seasoning
3/4 c panko bread crumbs
3/4 c milk
2 eggs, beaten
1/2 tsp salt & freshly ground pepper
PIQUANT SAUCE
1 c thick ketchup (heinz)
1/2 c light brown sugar
1 tsp ground dry mustard
1/2 tsp ground nutmeg

Steps:

  • 1. Mix the ingredients for the sauce and set aside to thicken.
  • 2. Preheat oven to 350F. In a large bowl mix ground beef and remaining 6 ingredients. I then mix this thoroughly and form into a loaf shape, fit into loaf pan and pour the sauce over the top. Bake 350F for 1 hour or until meatloaf is no longer pink.
  • 3. After you take meatloaf out of the oven, remove meat out of pan and let it rest on a small wire rack to drain. Then slice and serve.

2 lbs ground beef (90% lean)
1/4 cup Italian breadcrumbs (I use Progresso.)
1/2 cup potato, grated raw
1/2 cup onion, chopped
2 tablespoons fresh chives, chopped
1/2 cup raw carrot, shredded
1 cup cream-style cottage cheese
1 egg
2 teaspoons salt
1/2 teaspoon pepper
1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon dry mustard (ground spice)
1/4 teaspoon nutmeg

Steps:

  • Lightly mix together all ingredients until well blended.
  • Shape into two loafs (9x5x3) in a shallow pan.

1 1/2 lb ground beef
2 beaten eggs
1/4 c chopped onion
1 tsp seasoning salt
1/8 tsp pepper

PINQUANT SAUCE
1/4 c ketchup
3 Tbsp brown sugar
1/8 tsp nutmeg
1 tsp dry mustard
