This is a delicious bubble tea flavor. It has more texture than the normal bubble teas. The excess pistachio pudding mix adds another creamy texture at the bottom of the glass. For my OCD purposes I have added a drop of food dye to get that green pistachio colour. Note: You can use sugar free pudding mix. The tapioca pearl are grey in the package and can be found at asian supermarkets.

Number Of Ingredients 8

1/2 cup evaporated milk or 1/2 cup fat-free half-and-half
1/2 cup milk
1/2 cup water
1/2 cup tea, base
2 tablespoons sugar free pistachio pudding mix
1 tablespoon sugar syrup
2 -4 tablespoons cooked tapioca
ice

Steps:

  • Place all ingredients, except tapioca pearl and ice, in cocktail shaker or thermos. Shake well for 10 seconds.
  • Place Tapioca pearl into bottom of tall glass and pour shaken mixture over it.
  • Put as much ice as you want into glass and serve with bubble tea straw.

1 tablespoon butter
2 tablespoons chopped pistachio nuts
¼ cup white sugar
1 cup egg white
3 tablespoons all-purpose flour
1 pinch ground cardamom

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease cookie sheets.
  • Melt butter in a small saucepan over low heat. Add pistachios and stir until butter is lightly browned and pistachios toasted. Pour into mixing bowl.
  • Whisk in sugar and egg white. Mix in the flour, cardamom or ginger and whisk until smooth.
  • Drop by teaspoonfuls about 2 inches apart on baking sheets. Bake 12 to 15 minutes or until golden brown. Immediately transfer cookies to rack to cool.

Around the holidays, most individuals will pull out their beloved family recipe for peanut brittle, except me. I don't care for peanuts; however, I do find myself in love with brittle made with cashews, pecans, macadamia nuts, the list goes on, including pistachios! A candy thermometer is a must for this recipe due to the golden syrup! It's also best to use superfine granulated sugar as it melts better, and for best results make this when it is not humid.

nonstick cooking spray
¾ cup superfine sugar
2 tablespoons superfine sugar
½ cup unsalted butter
1 tablespoon water
½ teaspoon coarse salt
⅔ cup golden syrup (such as Lyle's®)
2 cups chopped roasted pistachios
1 teaspoon baking soda
1 pinch cayenne pepper

Steps:

  • Line a rimmed baking sheet with parchment paper and lightly coat with cooking spray.
  • Combine 3/4 cup plus 2 tablespoons sugar, butter, water, and salt in a saucepan over medium heat. Cook and stir until butter has melted, 3 to 5 minutes. Add syrup and stir until the sugar is completely dissolved and melted, about 5 minutes.
  • Allow mixture to come to a boil, stirring constantly. Once mixture reaches 310 degrees F (155 degrees C), remove saucepan from heat. Stir in pistachios, baking soda, and cayenne (mixture will foam).
  • Stir until mixture is no longer bubbling and caramel is smooth, about 1 minute. Transfer to the prepared baking sheet and spread out with a lightly greased spatula. Let cool until firm, about 15 minutes. Break into pieces.

A refreshing new twist on an old favorite. This is for the Asian tapioca pearl drink that is very popular in Taiwan now. Bubble Tea isn't hard to make at home and it is a lot more healthy and fresher tasting to make at home. If you don't have a cocktail shaker just use a 16 oz tightly sealed thermos or jar. I used a thermos and it works great! I will include recipes for the tea base. Note: You have to purchase the Bubble tea straws to drink up the large tapioca pearl. Otherwise you can use regular pearls, but that's not as much fun!
