8 dried figs

Steps:

  • Toast the pistachios in a dry skillet over a medium-high heat until fragrant, about 2 minutes. Set aside to cool. Chop coarsely.
  • Cut each fig in half crosswise and place the fig pieces on a serving dish, cut side up. Make a small indentation into the cut side of each fig half with a small spoon or your finger. 19 fresh ripe small figs, about 1 . 25 lbs
1/4 cup honey
1/2 cup part-skim ricotta cheese
1/4 cup natural almonds, toasted and chopped

Steps:

  • Mash the ripest fig on a plate with the honey, using a fork; set aside.
  • Trim stems from remaining figs with a sharp knife, then cut a deep "X" in the top of each, making sure not to cut all the way through to the bottom. Gently spread each fig apart with your fingertips to make "petals."
  • Combine ricotta cheese and almonds in a small bowl. Press mashed fig mixture through a sieve into a cup with the back of a spoon.
  • To serve, spoon ricotta mixture into figs. Arrange on a platter and drizzle with fig honey.

1/2 teaspoon whole fennel seeds
8 tablespoons (1 stick) unsalted butter
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 teaspoon anise extract or Sambuca
1 teaspoon freshly grated lemon zest
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup shelled pistachios
4 ounces dried figs, (about 6 large), stems removed, cut into 1/4-inch dice

Steps:

  • Heat oven to 350 degrees. In a small pan over medium-low heat, toast fennel seeds, swirling the pan; set aside. In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high speed until smooth, about 2 minutes. Add eggs, extracts, and zest, and beat on medium speed until creamy and light, 2 to 3 minutes.
  • In a medium bowl, combine remaining ingredients. Add to butter mixture. Mix on low speed until just incorporated. Remove dough to a clean surface; divide into quarters. Form into 9-by-1-inch logs, place on an ungreased baking sheet 2 inches apart, and bake until lightly browned, 25 to 30 minutes.
  • Remove from oven, and cool slightly. Reduce oven temperature to 275 degrees. Using a serrated knife, cut logs on the diagonal into 1/2-inch thick slices. Arrange biscotti on their sides on a baking sheet. Return to oven, and bake until golden, about 30 minutes. Turn biscotti over, and bake for 30 minutes more.

1 12-ounce package fresh cranberries, picked clean
1 orange, skin intact and seeds discarded, chopped into 1/4-inch cubes
2 tablespoons lemon juice
2 tablespoons finely chopped shallots
1 teaspoon dry ginger powder
1 cup sugar
3/4 teaspoon coarse salt
1/2 teaspoon ground cinnamon
1 teaspoon ground cumin
1/3 teaspoon cayenne
1 teaspoon mustard seeds, lightly crushed
1/3 cup shelled unsalted pistachio nuts (preferably raw)
2/3 cup California black figs, stemmed and chopped into 1/2-inch pieces, or 2/3 cup dark raisins

Steps:

  • Combine all the ingredients except the pistachios and figs in a 2 1/2-quart microwave-proof casserole dish and cover. Cook at 100 percent power in a 650- to 700-watt microwave carousel oven for 4 minutes. Uncover and continue cooking for an additional 5 minutes, or until the chutney is boiling and the cranberries begin to burst open. Stir once during the cooking time.

1/2 cup sweet white wine (such as Muscat or Essensia)
8 cups 1-inch cubes country-style white bread (about 12 ounces)

3 celery stalks, chopped
2 garlic cloves, minced

1/3 cup coarse kosher salt
1/4 cup (packed) golden brown sugar
1/4 cup honey
6 (5-inch-long) fresh rosemary sprigs
4 garlic cloves, peeled, smashed

6 cups cold water, divided
2 3-pound center-cut bone-in pork rib roasts (about 5 bones each)

  • Stir first 6 ingredients and 4 cups water in large saucepan over medium heat until salt and sugar dissolve. Remove from heat and add remaining 2 cups cold water. Cool brine to room temperature.

2 tbsp olive oil
70g unsalted butter
3 large onions , finely sliced
3 large garlic cloves , crushed
500g loaf sourdough bread
90g pistachios , roughly chopped
2 tbsp finely chopped sage , plus a few whole leaves
100g dried apricots , finely chopped
5 large eggs , beaten

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Heat the oil and 40g of the butter in a large frying pan over a medium heat. Add the onions and fry for 15-20 mins or until they are golden and caramelised. Add the garlic and cook for 1 min. Remove from the heat, tip into a large mixing bowl and leave to cool down a little.
  • Put half the sourdough into a food processor and blitz to a fine crumb. Tear the remaining bread into small pieces. Add both to the bowl with the onions and mix through 60g pistachios, the chopped sage, apricots and eggs, then season. Tip into a shallow 30 x 20cm baking dish. Will keep in the fridge for up to 24 hrs. Bake for 20 mins or until golden brown and crunchy on top (check after 10 mins and cover if it's already brown).
  • Melt the remaining butter in a frying pan, add the sage leaves and fry until crisp. Pour over the stuffing just before serving. Top with the remaining pistachios.
