This is our favorite sausage and sauerkraut dish ever. It's very filling and smells wonderful while it's cooking. From the Orbit Restaurant (Polish) in Chicago.

6 slices smoked bacon, 2-inch wide strips
1 large onion, sliced
1 carrot, chopped
2 lbs sauerkraut, rinsed and drained
2 cups dry white wine
1 1/2 cups chicken stock
1 tablespoon caraway seed
4 juniper berries or 1 tablespoon gin
1 1/2 lbs kielbasa, 3-inch lengths

Steps:

  • Preheat oven to 300ºF.
  • Place bacon, onion and carrot in heavy large ovenproof Dutch oven over medium-high heat.
  • Saute until onion is tender but not brown, about 5 minutes.
  • Squeeze as much liquid as possible from sauerkraut.
  • Add sauerkraut to Dutch oven.
  • Add wine, stock, caraway seeds and juniper berries.
  • Bring to simmer.
  • Cover tightly, place in oven and bake 1 hour.
  • Add kielbasa to Dutch oven, pushing into sauerkraut.
  • Cover and bake 1 hour.
  • Season to taste with salt and pepper.
  • (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring frequently).

4 lbs Polish sausage, fresh if possible
1/2 lb bacon
1 small yellow onion
2 (27 ounce) jars sauerkraut
1/2 cup brown sugar
3/4 cup water

Steps:

  • Preheat oven to 325 degrees Fahrenheit.
  • Bring sausage to boil and simmer 15 minutes; drain and set aside.
  • Cut bacon into small pieces.
  • Begin browning, then add diced onion.
  • Saute together until bacon is almost crisp.
  • Drain mixture, reserving bacon grease.
  • Drain sauerkraut (do not rinse).
  • Add sauerkraut and brown sugar to bacon mixture.
  • Mix in about 2 Tablespoons reserved bacon grease and water.
  • Place in large casserole dish.
  • Cut Polish sausage into 3" pieces and place on top of sauerkraut.
  • Cover and bake at 325 degrees Fahrenheit for 1 hour 15 minutes, checking sauerkraut mixture halfway through to add more water if sauerkraut appears very dry.
  • Finish baking; remove from oven.
  • Taste sauerkraut and, if desired, adjust flavor by adding salt and pepper, or a little more brown sugar, vinegar or bacon grease to your taste. (Note: In the old days, Busia (Grandma) would soak a cup of yellow peas overnight to soften them and would mix them into the sauerkraut. It was probably to stretch the quantity, but I don't do it anymore!).

flour, to coat
1 tablespoon oil, fat or 1 tablespoon butter
8 ounces sauerkraut
onion soup mix, 1/2 packet
1 cup applesauce or 2 apples
1 teaspoon brown sugar
1/4 teaspoon ginger
1/2 cup apple juice, separated in half

Steps:

  • *If using fresh apples, peel, core and dice the apples. Simmer in a little apple juice or water, covered until soft. Mash with a potato masher and you have easy, fresh, homemade applesauce!
  • Pat pork loin dry. Season generously on both sides with salt & pepper and then with the pork seasoning. Let sit for 15-30 minutes at room temperature
  • Sprinkle the roast on both sides with flour to coat.
  • Preheat oven to 325.
  • Heat oil or butter over medium-high heat, add loin and brown on all sides.
  • Add undrained sauerkraut to an oven dish and place loin on top.
  • Add applesauce, onion soup mix, brown sugar and ginger to the skillet used to cook the pork. Mix well and spoon over the top of the pork.
  • Pour 1/4 cup of the apple juice to the bottom of the pan, over the sauerkraut.
  • Cover dish with foil and bake for 30 minutes, basting halfway through.
  • After 30 minutes, remove foil, add the other 1/4 cup of apple juice, baste again and cook for 15 more minutes, uncovered.
  • Remove from oven and let pork sit for 10-15 minutes before slicing.
  • Slice and serve over the sauerkraut.

1 package (1/4 ounce) active dry yeast

  • In a large bowl, combine 3 cups all-purpose flour, rye flour, sugar, salt and yeast. In a saucepan, heat water and butter to 120°-130°. Add to dry ingredients; beat until smooth. Stir in sauerkraut and enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. This is a fantastic way to prepare pork chops. I've been doing it for years. For the apples, I usually use Granny Smiths, but you can use any apple that you'd normally eat on its own. DON'T use a cooking apple. You need a sweeter apple to balance with the sauerkraut.

6 pork loin chops
1 large onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
2 lbs sauerkraut

Steps:

  • Melt the butter in a flameproof casserole dish, and fry the chops till browned on both sides. Remove from pan and set aside.

5 tablespoons butter
2 tablespoons olive oil
1 onion, finely chopped
3/4 lb Polish sausage, casing removed
3/4 lb cooked corned beef (1 c. chopped fine)
4 garlic cloves, chopped fine
6 tablespoons flour
2 cups sauerkraut, drained and chopped fine
1 tablespoon fresh parsley, chopped
1/2 cup beef broth
1 egg
2 cups milk
2 1/2 cups flour
4 cups breadcrumbs
1 tablespoon garlic salt
1 tablespoon dried parsley
1 cup canola oil (for frying)

Steps:

  • In a large skillet, melt 2 TBS. butter and 2 TBS. olive oil over low heat. Squeeze out polish sausage from casing and add to skillet. Increase heat and cook sausage, breaking it up fine, like ground beef. Cook thoroughly. Remove from skillet and drain.
  • In the same skillet, melt 3 TBS. butter over low heat. Add onion and cook until softened. Add the polish sausage, corned beef and garlic. Cook for 1 minute, stirring constantly. Add the 6 TBS. flour and cook and stir for 3 minutes.
  • Add sauerkraut, parsley and broth. Cook until thickened and paste-like, about 3 minutes or so. Spread out the mixture on a cookie sheet or platter and chill in the fridge for about 3 hours.
  • Add oil to skillet about 1" deep. Heat your oil. If you use a deep fryer, heat to 375°F.
  • In one bowl, whisk the egg, milk and 2 1/2 cups of flour. In another bowl, add the breadcrumbs, garlic salt and dried parsley.
  • Remove sauerkraut from fridge and roll into small balls, about 1" in diameter. Dip the balls into the egg mixture and then roll them in the bread crumb mixture.
  • Fry them in batches for 2-3 minutes or until they are golden brown and drain on a paper towel. Serve warm.

1 polish kielbasa (fully cooked), diced
6 potatoes, peeled and diced into small pieces
1 medium yellow onion, finely diced
1 small carrot, grated
1 tsp caraway seeds
1/4 tsp marjoram
1/2 Tbsp vegeta (all - purpose seasoning)
1 Tbsp pepper
1 Tbsp hungarian paprika
salt to taste
sour cream dollops (garnish on top)
freshly chopped dill, chives and parsley for garnish)

Steps:

  • 1. Sautee onions in pan with the butter until onions are tender (don't completely brown / carmelize them).
  • 2. At the same time, in a pot, add potatoes and enough water to cover them about an inch over the tops of the potatoes.
  • 3. Add onions to potatoes. Cover and let cook for 5 minutes. In the meantime, rinse and drain your sauerkraut.
  • 4. Add the rest of the ingredients to the pot except for the optional ones and the salt-to-taste.
  • 5. Add more water to just cover all the ingredients. Cover and let cook until potatoes are tender (about 20-25 minutes).
  • 6. After potatoes are tender, turn off heat. Stir in salt-to-taste. Add extra pepper if you'd like.
  • 7. When serving, garnish top with dollop of sour cream, freshly chopped dill and/or chives, and/or parsley. Eat this soup with some good buttered polish rye bread on the side!

2 can(s) cream of mushroom soup
16 oz can or jar sauerkraut, rinsed and drained well

1 1/2 c 2% milk
4 green onions, chopped
2 Tbsp dijon mustard
4 cloves garlic, minced
