It is really good just as it is, or if you have left overs the next day it is really good with tostito chips, fitos, or tortillas. The ultimate quick man meal. My husband always wants me to cook this, and the left overs are just as good if not better. :)

1 lb ground beef
1 small onion, diced
1 green pepper, diced
1 (28 ounce) can corn (don't drain the juice)
1 (28 ounce) can diced tomatoes (don't drain the juice)
4 diced potatoes
zucchini (optional) or squash (optional)

Steps:

  • First brown the ground beef, and drain, then add the onions and green peppers. Season your meat with salt, pepper to taste. Or how you normally season it.
  • Then add the cans of corn and diced tomatoes and let it cook covered in the juice until the potatoes are tender.
  • This is really yummy with corn bread and tortillas. This one is my family's favorite goulash, we have tried many.

This one of my favorite stovetop 'one-dish' meals... It's really a Goulash recipe that's been 'adapted' into lighter fare and for lactose intolerance... Macaroni instead of egg noodles and the macaroni is actually added to the mixture instead of the mixture served over the macaroni... There is no sour cream (for the lactose intolerant!) and chili powder is used instead of paprika for a 'kick'... I love having this in the wintertime, it really warms me up!

2 cups elbow macaroni, cooked & drained (Ronzoni Whole Wheat pasta)
1 lb ground turkey (breast) or 1 lb ground chicken (breast)
2 tablespoons olive oil
1 small yellow onion, finely chopped
1 teaspoon dried parsley
1 teaspoon dried celery flakes
1 teaspoon salt (optional)
1/2 teaspoon black pepper
1/4 teaspoon chili powder
1 (28 ounce) can whole tomatoes (no salt added)

Steps:

  • After cooking the macaroni, drain and put in deep saucepan and set aside --.
  • In a dutch oven, brown the ground turkey with the onion in the oil, stirring often while it cooks -- Drain --.

I found this recipe in a Rachael Ray magazine. It's delicious, hearty, and surprisingly inexpensive! It has quickly become one of my favorite dishes. Just a heads up, this makes A LOT of gumbo. It feeds me for about 5 days. I'd guess that it would last a family of 4 about 2 days.

12 slices bacon (about 1/2 lb)
2 celery ribs, chopped
1 onion, chopped
1 (14 1/2 ounce) can tomatoes, diced
1 (12 ounce) can tuna, solid white packed in water
1/4 cup tomato paste
1 jalapeno chile, seeded and chopped
1 teaspoon file powder, like Zatarain's (I just found a box of gumbo mix and used its flavoring because I couldn't find what she was describi)
1 1/4 cups rice, cooked

Steps:

  • In a large heavy skillet, cook the bacon over mid heat until crisp.
  • Transfer to a paper towel lined plate.
  • Drain off all but 1/4 c bacon fat and return the skillet to the heat.
  • Add celery and onion and cook until tender, about 5 minutes.
  • Add the tomatoes, tuna & liquid, tomato paste, jalapeño and 1 c water.
  • Simmer until thickened, about 20 minutes.
  • Whisk in the file powder, remove from heat.
  • Serve gumbo over rice and crumble bacon on top.

1 can (15 oz.) peas

Steps:

  • Preheat oven to 350-375 degrees F. Prepare an oven-safe casserole dish; so not to stick. Brown ground beef and onion (Drain fat from meat when done). Prepare Kraft Macaroni and Cheese (as directed on box) as you are browning beef and onion.
  • Pour the can of peas (juice and all) into casserole dish first- no need to warm. Layer the beef next. Next spread the prepared Kraft Macaroni and Cheese over the mixture evenly.
