1 pie crust (unbaked)

Steps:

3 eggs
1 cup sugar
1 cup old-fashioned oats
3/4 cup dark corn syrup
1/2 cup sweetened shredded coconut
2 tablespoons butter, melted
1 teaspoon vanilla extract
1 unbaked pastry shell (9 inches)
Whipped topping and toasted sweetened shredded coconut, optional

Steps:

  • In a large bowl, combine the first seven ingredients. Pour into pastry shell. , Bake at 375° for 15 minutes; reduce heat to 350°. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cover edges with foil during the last 15 minutes to prevent overbrowning if necessary. Cool on a wire rack.
