OLD-FASHIONED PORK CAKE
This recipe is one that my Grandma Lewis would make when she had the ingredients on hand -- because the family lived deep in the mountains of West Virginia a quick trip to the store was not feasible especially during the winters months. My grandma was a terrific cook and never measured ingredients (old school of little bit of this, little bit of that) but it didn't matter because whatever she cooked always tasted good and filled you up! This recipe is one of my dad's favorites and I hope you like it, too!

Tips:
- Choose the right beans. Pinto beans, black beans, and kidney beans are all good choices for pork and bean cakes. They hold their shape well and have a mild flavor that pairs well with pork.
- Use cooked beans. Canned beans are a convenient option, but you can also cook your own beans from scratch. To cook beans, soak them overnight in water, then rinse and simmer them in fresh water until tender.
- Season the beans well. Before adding the beans to the pork mixture, season them with salt, pepper, and other spices. This will help to enhance their flavor.
- Use a food processor to grind the pork and beans. This will help to create a smooth and even mixture. If you don't have a food processor, you can also chop the pork and beans by hand.
- Form the pork and bean mixture into cakes. Use your hands to shape the mixture into small, flat cakes. Be sure to press the cakes firmly so that they hold together.
- Cook the pork and bean cakes over medium heat. This will help to prevent them from burning. Cook the cakes for 4-5 minutes per side, or until they are cooked through.
- Serve the pork and bean cakes with your favorite sides. Mashed potatoes, roasted vegetables, or a simple salad are all good options.
Conclusion:
Pork and bean cakes are a delicious and easy-to-make dish that can be enjoyed by people of all ages. They are a good source of protein, fiber, and vitamins, and they can be served as a main course or a side dish. With a little creativity, you can also adapt the recipe to your own taste preferences.
