PORK CHOPS ALLA FIORENTINA

This might be my favorite way to get Jade to eat some spinach. The mascarpone keeps it light while adding a creaminess that marries all the flavors together into a luscious sauce. It's in our rotation year-round.

Time 50m

Yield 2 to 4 servings

Number Of Ingredients 9

2 to 3 bone-in pork loin chops (about 12 ounces each)
1 1/2 teaspoons kosher salt
2 tablespoons olive oil
1 tablespoon unsalted butter
2 shallots, thinly sliced
2 cloves garlic, smashed, peeled and cut in half
One 5-ounce container baby spinach, roughly chopped
1/2 cup mascarpone cheese
4 teaspoons freshly squeezed lemon juice (about 1/2 large lemon)

Steps:

  • Remove the pork chops from the refrigerator 30 minutes before cooking.
  • Heat a large skillet over medium-high heat. Dry the pork chops well on both sides using paper towels and season evenly with 1 teaspoon salt.
  • Add the oil to the pan and heat an additional 30 seconds. Add the pork chops to the pan and cook, undisturbed, until deep golden brown and beginning to look cooked around the edges, about 5 minutes. Flip the chops, lower the heat to medium and cook, searing the edges as well, until golden brown and the center reaches 140 to 145 degrees F, about 5 minutes. Remove to a plate to rest and carry-over cook.
  • Return the pan to medium heat and add the butter, shallots and garlic. Cook until fragrant and soft, about 1 minute. Add the spinach to the pan along with the remaining 1/2 teaspoon salt and cook, stirring often until wilted. Stir in the mascarpone, lemon juice and 2 tablespoons water and bring to a simmer. Stir in any juices from the pork that have accumulated on the plate and cook for 2 minutes longer. Spoon the sauce over the pork chops and serve.

ROLLED PORK FLORENTINE

Provided by Food Network

Time 1h40m

Yield 4 servings

Number Of Ingredients 9

1 pork loin, about 2 pounds/900 g
Salt and freshly ground black pepper
7 ounces/200 g spinach
2 slices bacon, cut into lardons
1 medium onion, chopped
1 clove garlic, minced
4 tablespoons fresh breadcrumbs
1 tablespoon oil, for frying
1/2 cup/125 ml white wine

Steps:

  • Heat the oven to 375 degrees F. Set the pork on a cutting board and imagine you're going to cut an upside-down letter T into it: in other words, slice half-way through, lengthwise, then half-way through to the left and the right. Open out the meat. Lay plastic wrap over it, and pound flat with a mallet. Season with salt and pepper, and set aside.
  • Rinse the spinach and spin dry, allowing a little water to remain clinging to the leaves. Put it in a saute pan, cover, and wilt, about 5 minutes. Lay the spinach on a clean tea or kitchen towel and squeeze dry. Chop, and set aside.
  • Wipe out the pan and put if back on the stove. Fry the bacon until cooked, remove to drain. Pour off all but a tablespoon or 2 of the fat and fry the onion until golden. Add the garlic and cook 1 minute. Stir through the bread crumbs and spinach. Season with salt and pepper.
  • Pat the stuffing over the meat, leaving a 1-inch border. Roll and tie the pork at 2-inch intervals. Wipe out the saute pan and heat the oil in it. Brown the meat on all sides, pour in the wine, and then transfer to the oven and roast until done, about 45 minutes. Remove from the oven and let the meat rest 10 minutes. Wrap for later, or slice and serve with the pan juices poured over.

Pork chops florentine is one of my favorite one-pan meals. It's so easy to make and full of flavor. I love serving this with rice pilaf or simple buttered pasta.

Number Of Ingredients 14

4-6 pork chops (1 1/2" thick)
3 tablespoons olive oil (divided)
1- pint cherry tomatoes
2 tablespoons unsalted butter
1/2 large yellow onion (diced)
6 cloves garlic (minced)
1/2 cup dry white wine
8 oz bag fresh baby spinach
1/2 cup chicken broth
3/4 cup heavy cream
1 cup freshly grated parmesan cheese
Fresh basil leaves (for serving)
Kosher salt (to taste)
Freshly ground pepper (to taste)

Steps:

  • Preheat an oven to 400 degrees F. Toss cherry tomatoes with 2 tablespoons of olive oil and a light sprinkling of kosher salt and freshly ground pepper. Place on a parchment-lined baking sheet and roast until lightly browned, about 30-35 minutes. Remove the tomatoes from the oven and set them aside.
  • While the tomatoes are roasting, pat the pork chops very dry with paper towels and season on both sides with salt and pepper.
  • Heat a large, oven-safe skillet or braiser over medium heat and add the remaining olive oil. Place the pork chops in the skillet and sear on the first side for 5-7 minutes, until deeply golden brown. Flip the pork chops over and sear for another 2-3 minutes. Transfer them to a plate.
  • Add butter, diced onion, and garlic to the pan and cook for 2-3 minutes, working to scrape up any browned bits from the pan. Add the tomatoes and white wine and cook until most of the white wine has evaporated. Next, add the spinach and cook until the spinach has wilted. Then, add the broth and cream and stir well to combine. Bring to a simmer, add the parmesan, and stir until melted. Season to taste with salt and pepper.
  • Return the pork chops to the pan and transfer, uncovered, to the oven. Bake for 25 minutes, until the pork chops are cooked through. Top with fresh basil and more parmesan. Serve warm!

PORK CHOPS FLORENTINE RECIPE

Pork Chops Florentine Recipe image

Provided by charlotteh371

Number Of Ingredients 11

4 boneless pork chops
Salt and pepper, to taste
4 tablespoons olive oil, divided
8 cloves garlic, minced
¼ cup bacon pieces, half-cooked
½ cup chicken stock
2 cups heavy cream
1½ cups chopped fresh baby spinach
½ cup chopped fresh tomato
¼ cup grated Parmesan cheese
1 teaspoon Italian seasoning

Steps:

  • Directions Season pork chops on both sides with salt and pepper, to taste. In large skillet, heat 2 tablespoons oil over medium heat. Cook pork chops 4-5 minutes per side until internal temperature reaches 145 degrees. Remove pork chops from pan and keep warm. In same skillet, heat remaining oil over medium heat. Add minced garlic and partially cooked bacon to skillet; cook until tender, about 3 minutes. Add chicken stock and bring to a simmer. Reduce heat to low and add heavy cream. Season with salt and pepper. Add spinach and tomatoes to sauce; let spinach wilt. Stir in Parmesan cheese and Italian seasoning; simmer about 3 minutes. Return pork chops to pan along with juices. Spoon Florentine sauce over chops; simmer 3-5 minutes.

Tips:

  • To achieve perfectly cooked pork chops, use a meat thermometer to ensure they reach an internal temperature of 145 degrees Fahrenheit. This will result in juicy and tender chops.
  • Season the pork chops generously with salt and pepper before cooking. This will help enhance their flavor.
  • To prevent the pork chops from drying out, cook them over medium heat. High heat will cause the chops to cook too quickly, resulting in dry and tough meat.
  • If you are using a cast-iron skillet, make sure to preheat it over medium heat before adding the pork chops. This will help create a nice sear on the chops.
  • To make the Florentine sauce, use fresh spinach for the best flavor. If you don't have fresh spinach, you can use frozen spinach, but make sure to thaw it and drain it thoroughly before using.
  • Garnish the pork chops with freshly grated Parmesan cheese before serving. This will add a delicious cheesy flavor to the dish.

Conclusion:

Pork chops Florentine is a classic dish that is easy to make and always a crowd-pleaser. The juicy pork chops are smothered in a creamy Florentine sauce made with spinach, Parmesan cheese, and garlic. This dish is sure to become a favorite in your household.
