2 tablespoons unsalted butter
1 small Spanish onion, finely chopped
2 tablespoons all-purpose flour

Homemade Potato Chips, recipe follows, or good-quality store-bought potato chips
6 large Idaho potatoes, peeled and sliced lengthwise into 1/8-inch thick slices on a mandoline
2 quarts peanut oil

Steps:

  • Place the milk in a small saucepan and bring to a simmer over low heat. Heat the butter in a medium saucepan over medium heat. Add the onion and cook until soft. Stir in the flour and cook for 1 minute. Slowly whisk in the warm milk, and continue whisking until thickened. Season with salt and cayenne pepper. Continue cooking for 5 minutes, whisking occasionally. Remove from the heat and stir in the cheese. If the sauce is too thick, thin it with a little extra milk. Serve sauce warm with potato chips for dipping.
  • Place the potato slices on a baking sheet between layers of paper towels to make sure they are very dry before frying.

1 tablespoon sweet smoked paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder

Three 8-ounce bone-in loin pork chops
3 to 4 tablespoons olive oil
1 cup sour cream
1/2 cup milk
1/2 cup mayonnaise
Zest of 1 lemon
Kosher salt and freshly ground black pepper
1 cup blue cheese crumbles
8 slices bacon
2 heads Romaine lettuce, chopped
2 cups spinach, stems removed
1 pint grape tomatoes, halved
1 medium red onion, chopped
3 hard-boiled eggs, chopped
2 cups frozen peas, thawed

Steps:

  • For the pork chops: Combine the salt, brown sugar, smoked paprika, cayenne pepper, onion powder and black pepper in a small bowl. Season the pork chops on both sides with the spice mixture, cover with plastic wrap and let sit at room temperature for 1 hour.

  • To assemble the salad: Slice the pork chops 1 1/2-inches thick. Put a layer of lettuce in the bottom of the trifle dish, then layer in the spinach, grape tomatoes, onion, hard-boiled eggs, crumbled bacon and peas in that order. Repeat the layers and then top with the pork chops. Serve with the blue cheese dressing.

1 tablespoon minced shallot
3 tablespoons olive oil
1/2 cup dry red wine
1/2 cup apple balsamic vinegar *, or 5 tablespoons cider vinegar mixed with 3 tablespoons balsamic vinegar
1 1/2 cups chicken stock, homemade or store-bought**, but not canned broth
1 cup veal stock, homemade or store-bought**
6 (1-inch-thick) rib pork chops (each about 1/2 pound)
1/2 Granny Smith apple
1/2 cup golden raisins
Accompaniment: blue cheese potato gratin

Steps:

  • Cook garlic and shallot in 1 tablespoon oil in a 3-quart heavy saucepan over low heat, stirring occasionally, until softened, 3 to 5 minutes. Add wine and vinegar and boil until reduced to about 1/2 cup, 8 to 10 minutes. Add chicken and veal stocks and boil until reduced to about 1 1/3 cups, 15 to 20 minutes.
  • Preheat oven to 400°F.
