Time 1h20m

Yield 4 servings

Number Of Ingredients 14

2 tablespoons vegetable oil
1 (2-pound) boneless center cut pork loin, trimmed and tied
Kosher salt and freshly ground black pepper
1 medium onion, thickly sliced
2 carrots, thickly sliced
2 stalks celery, thickly, sliced
3 cloves garlic, smashed
3 sprigs fresh thyme
3 sprigs fresh rosemary
4 tablespoons cold unsalted butter
2 apples, such as Cortland or Rome peeled, cored and cut into 8 slices
2 tablespoons apple cider vinegar
1 cup apple cider
2 tablespoons whole grain mustard

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet heat the vegetable oil over high heat. Season the pork loin all over generously with salt and pepper. Sear the meat until golden brown on all sides, about 2 to 3 minutes per side. Transfer the meat to a plate and set it aside.
  • Add the onion, carrot, celery, garlic, herb sprigs, and 2 tablespoons of the butter to the skillet. Stir until the vegetables are browned, about 8 minutes. Stir in the sliced apples, then push the mixture to the sides and set the pork loin in the middle of the skillet along with any collected juices on the plate. Transfer the skillet to the oven and roast the loin until an instant-read thermometer inserted into the center of the meat registers 140 to 150 degrees F, about 30 to 35 minutes. (See Cook's Note.)
  • Transfer the pork a cutting board and cover it loosely with foil while you make the sauce. Arrange the apples and vegetables on a serving platter and set aside. Remove and discard the herb sprigs. Return the skillet to a high heat and add the vinegar scraping the bottom with a wooden spoon to loosen up any browned bits. Reduce by half then add the cider and reduce by about half again. Pull the skillet from the heat and whisk in the mustard, and the remaining 2 tablespoons of cold butter. Adjust the seasoning with salt and pepper, to taste.
  • Remove the strings from the roast and slice into 1/2-inch thick pieces and arrange over the apple mixture. Drizzle some sauce over meat and serve the rest on the side.
  • Cook's Note: Pork cooked this way will be slightly pink. If desired, cook the pork to 160 degrees F, but be aware that this lean cut will not be as moist at the higher temperature.

Pork Loin Stuffed with Apples image

Provided by Food Network

Number Of Ingredients 10

1/4 pound slab bacon, cut into large dice
4 granny smith apples, peeled, cored and sliced
1 tablespoon sugar
Salt and freshly ground black pepper
2 tablespoons butter
4 medium yellow onions, peeled and sliced
1/2 pound white mushrooms, sliced
1/2 cup cider vinegar
3 tablespoons coarsely chopped fresh sage
1 (6 pound) center cut pork loin (9 chops), trimmed, with bones cracked

Steps:

  • Cook bacon in a large skillet over medium heat until crisp and golden brown, about 8 minutes. Toss apples with sugar in a bowl. Increase heat in skillet to medium-high heat, add apples, and saute until they are golden, about 10 minutes. Season to taste with salt and pepper, then transfer apples to a bowl. In the same skillet, melt butter over medium heat. Add onions and cook, stirring occasionally, until golden, about 20 minutes. Add mushrooms and cook until they begin to brown about 20 minutes. Increase heat to high, add 1/4 cup vinegar, and stir with a wooden spoon until vinegar evaporates, about 1 minute. Add sage and season with salt and pepper. Add mushroom-onion mixture and bacon to apples and allow to cool. Preheat oven to 350 degrees. Stand the loin with the bone side facing away from you and make a 3-inch slit, about 1 1/2 inches down the middle of each chop to make a pocket. Spoon about 1/4 cup apple mixture into each pocket. Season stuffed loin with salt and pepper, transfer to a roasting pan and roast for 1 hour. Pour remaining vinegar and 1/4 cup water into pan and scrape browned bits off bottom with a wooden spoon. Scatter remaining apple mixture around loin and continue roasting until the internal temperature of pork reaches 150 degrees (note, internal temperature will rise to 160 after resting), about 1 1/4 hours. Transfer pork to a platter, allow to rest for 15 minutes, then slice into chops and serve with apples.;

APPLE STUFFED ROAST PORK LOIN

Apple Stuffed Roast Pork Loin image

There is nothing better then pork with apples. Serve this dish with a light vegetable such as steamed green beans, or green beans almandine.

Provided by Dancer

Categories     Pork

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 8

2 cups bread cubes, small, dried or 2 cups baked bread cubes
2 cups milk
3 tablespoons butter, softened
1 teaspoon fresh ground sage
1 teaspoon cinnamon
4 medium sized apples, skinned and diced small (sweet)
2 -3 lbs pork loin, center cut, cleaned
2 cups apple juice, 100%

Steps:

  • Trim as much fat and "silverskin" off of the pork as possible.
  • With a good center cut there shouldn't be much besides the bottom.
  • Then, using a boning knife cut the pork lengthwise at a 45 degree angle about an inch to an inch-and-a-half from the outside edge.
  • Do this on both sides creating a wide V shape in the center of the pork, so that you can pull the chunk out.
  • Take this piece that you removed and slice it into 1/4-inch to 1/2-inch strips, lengthwise so that you have about 4 to 5 cuts, set aside.
  • Set the oven to preheat at 325 degrees.
  • In a large mixing bowl, mix together the bread cubes, butter, milk, spices and apple until mixed well.
  • The mixture shouldn't be too soft and might not clump as much as you might think.
  • Stuff the mixture on top of the pork, rounding out the top.
  • Don't be afraid to "overstuff" the top of the pork.
  • Take the strips of pork we cut earlier and lay them out across the width of the pork loin on top of the stuffing.
  • Spread them out evenly to create a pattern.
  • Place the pork loin in a good-sized baking dish with extra room.
  • Place any remaining stuffing around the pork to fill the pan, if possible.
  • Pour the apple juice over the pork loin and the stuffing.
  • Bake the pork loin at 325 degrees for up to 60 minutes.
  • Check it with a meat thermometer, and when the internal temperature of the pork reaches 160 degrees, it is finished.
  • If you prefer your pork well done, let it reach 170 degrees.
  • This might add an additional 10 to 15 minutes cooking time.

Yield Makes 4 servings

Number Of Ingredients 12

1/4 cup golden raisins
3/4 cup Riesling (or Gewürztraminer)
1 1/2 Fuji apples, peeled, cored and cut into 1/2-inch cubes, peel and core reserved
Pinch of cinnamon
2 lb center-cut boneless pork loin (ask butcher to make a 1-inch incision in the center all the way through)
Sea salt
Vegetable-oil cooking spray
1 medium onion, diced large
1 carrot, diced large
1 celery stalk, diced large
4 stems fresh rosemary
1/2 cup balsamic vinegar

Steps:

  • Heat oven to 375°F. Soak raisins in cup wine for 10 minutes. Combine raisins (including wine not absorbed), apples and cinnamon in a bowl. Fill pork-loin cavity with apple-raisin mixture. Season pork with sea salt and pepper; set aside 15 minutes at room temperature. (If loin splits, tie with kitchen twine.) Meanwhile, coat a roasting pan with cooking spray and heat over medium-high heat. Sear pork on all sides until golden brown, about 4 minutes total, turning frequently so it doesn't stick. Place onion, carrot, celery, rosemary and apple peels and cores in pan; place pork on top. Cook 25 minutes or until pork reaches 150°. While meat cooks, reduce vinegar and remaining 1/2 cup wine in a small saucepan 15 to 20 minutes on high heat until thick and syrupy. Remove pork from pan; let rest 10 minutes. Slice pork and divide among plates. Drizzle reduction over pork.

Tips:

  • Choose the right pork loin roast. Look for a roast that is about 3 pounds and has a good amount of marbling. This will help ensure that the roast is tender and flavorful.
  • Prepare the apples. Core the apples and stuff them with the yam mixture. This will add a sweet and savory flavor to the roast.
  • Season the roast. Rub the roast with salt, pepper, and garlic powder. This will help to enhance the flavor of the meat.
  • Cook the roast. Place the roast in a roasting pan and cook it in a preheated oven at 350 degrees Fahrenheit for about 2 hours, or until the internal temperature reaches 145 degrees Fahrenheit.
  • Let the roast rest. Once the roast is cooked, remove it from the oven and let it rest for about 15 minutes before carving. This will help to keep the juices in the meat.

Pork loin roast with yam-stuffed apples is a delicious and easy-to-make dish that is perfect for a special occasion or a weeknight meal. The tender and flavorful pork roast is complemented perfectly by the sweet and savory yam filling. This dish is sure to be a hit with your family and friends. `
