ROOT BEER POT ROAST

Root Beer Pot Roast image

This recipe is from the October 2004 issue of Southern Living. It's a different twist to the usual pot roast. My kids & picky husband loved it served with mashed potatoes.

Provided by Melissa Spangler

Tips:

  • Use a heavy pot or Dutch oven with a tight-fitting lid to ensure even cooking and prevent the liquid from evaporating too quickly. A Dutch oven is an especially suitable choice as it retains heat well and cooks evenly.
  • Braise the pot roast on low heat for at least 2-3 hours, or until the beef is fork-tender. It's a good idea to check the meat every hour or so and add more liquid if necessary.
  • Choose a flavorful beer for braising. Dark beers like stout or porter add a rich, malty flavor, while lighter beers like lager or ale impart a more subtle flavor.
  • Add vegetables to the pot roast for a hearty and flavorful meal. Carrots, celery, onions, and potatoes are classic choices, but you can also add other vegetables like parsnips, turnips, or rutabagas.
  • Season the pot roast generously with salt, pepper, and herbs. Thyme, rosemary, and bay leaves are all good choices. You can also add a bit of garlic or onion powder for extra flavor.
  • Serve the pot roast with mashed potatoes, roasted vegetables, or rice. A hearty bread roll or a side of crusty bread is also a great accompaniment.

Conclusion:

Pot roast in beer is a classic comfort food that is easy to make and always a crowd-pleaser. With a few simple ingredients and a little bit of time, you can create a delicious and flavorful meal that the whole family will love. The beef is melt-in-your-mouth tender, the vegetables are perfectly cooked, and the gravy is rich and savory. Serve it with your favorite sides and enjoy a hearty and satisfying meal.
