Comfort soup at its finest! I usually make this to use up leftover ham. This is easy to adapt with other ingredients. I don't put celery in mine. I have added garlic sometimes as well.

3 1/2 cups potatoes, peeled and diced (I keep mine with the peel)
1/3 cup celery, diced
1/3 cup onion, finely chopped
1 cup chopped carrot
1 -2 cup ham, diced and cooked
3 1/4 cups chicken broth or 3 1/4 cups ham stock
2 tablespoons chicken bouillon granules (omit if using chicken broth)
salt (to taste)
1 teaspoon pepper
5 tablespoons butter
5 tablespoons flour
2 cups milk
2 cups cheddar cheese, shredded

Steps:

  • Combine potatoes, celery, carrots, onion, ham, and water/broth in stockpot and bring to boil.
  • Then cook over medium heat until potatoes are tender.
  • Stir in the chicken bouillon, salt (if using), and pepper.
  • In separate saucepan, melt butter over medium-low heat. Whisk in flour and cook stirring constantly until thick.
  • Slowly stir in milk as not to allow lumps to form and all milk is added. Turn up to medium heat. Continue to stir until thick (4-5 minutes).
  • Add in cheese and stir until melted.
  • Stir the cheese mixture into the stockpot and cook until heated through. (I also will break up some of the potatoes for thickness. It gets thicker as it cools and next day).

8 ounces smoked ham, diced

4 cups chicken broth
2 cups water
½ cup heavy cream
salt and pepper to taste
1 pinch cayenne pepper
1 tablespoon chopped fresh chives for garnish

Steps:

  • Melt butter in a stockpot over medium heat until golden brown. Stir in carrot, celery, onion, ham, and garlic; cook and stir for 5-6 minutes, until the vegetables soften and the onions are translucent.
  • Stir in flour; cook for about 3 minutes. Stir in chicken broth, 1 cup at a time. Add water and stir to combine. Turn the heat to high and bring to a simmer. Simmer on medium-low for 15 minutes, stirring occasionally.
  • Taste the soup for salt and add more if necessary. Stir in potatoes; cook for 15 minutes, until potatoes are tender. Skim fat if desired.
  • With a potato masher, mash the soup a few times, leaving plenty of whole chunks of potato. Season with salt and pepper to taste, add cayenne if desired, and add cream. Stir to combine and heat through. Garnish with fresh chives.

4 cups chicken broth
3 large Yukon Gold potatoes, peeled and cubed
3 large sweet potatoes, peeled and cubed
1 tablespoon vegetable oil
1 ½ cups chopped cooked ham
4 leeks, chopped
1 cup half-and-half
salt and ground black pepper to taste

Steps:

  • Bring chicken broth to a boil in a large Dutch oven. Add Yukon gold and sweet potatoes, bring back to a boil, and turn heat to medium-low. Simmer until tender, 10 to 20 minutes.
  • Heat vegetable oil in a skillet over medium-high heat. Add ham; cook and stir for 2 minutes. Add leeks; cook and stir until leeks are soft, about 5-10 minutes. Do not allow the leeks to brown.
  • Stir leek and ham mixture into potatoes and broth. Add half-and-half; season to taste with salt and ground black pepper.

I have a potato soup recipe I love, but I wanted it to be a little less heavy on the carbs (not carb free, but just less). I decided to add cauliflower to replace some of the potatoes, and we couldn't really tell- plus it tasted great. I don't really measure my spices, so do it to your taste.

4 cups chopped cauliflower
3 cups diced potatoes
6 cups water
2 chicken bouillon cubes
1 (8 ounce) package reduced-fat cream cheese, cubed
2 cups carrots, chopped and steamed
2 cups diced cooked turkey ham
2 garlic cloves, chopped fine
Lawry's Seasoned Salt
white pepper
1 dash cayenne pepper

Steps:

  • 1. Bring water to a boil and add potatoes, cauliflower, and chicken bullion. Reduce heat to medium high and cook until very tender, at least 20 minutes.
  • 2. Carefully transfer to a blender or food process, or use an immersion blender. Blend in batches, and return soup to the pot.
  • 3. Reduce heat to medium. Melt in cream cheese. Season and add garlic.
  • 4. Add carrots and ham. Cook till ham and carrots are warmed through.

This is a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great. It's a hearty, easy to do soup that's ready in about 45 minutes. Perfect for using up leftover ham.

3 1/2 cups peeled and diced potatoes
1/3 cup diced celery
1/3 cup finely chopped onion
3/4 cup diced cooked ham
3 1/4 cups water
2 tablespoons chicken bouillon granules
1/2 teaspoon salt (to taste)
1 teaspoon pepper (white or black to taste)
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk

Steps:

  • 1. Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper.
  • 2. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes.
  • 3. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.
  • My Note: We don't care for cooked celery so I use a little celery seed . I use this recipe as a base also, with many variations , such as -- no meat at all , italian sausage & extra onion, (my favorite), diced chicken breast & (presteamed) broccoli (my grandkids' favorite !)and coming soon .garlic, chicken breast, baby carrots, frozen corn,green beans and coarsely chopped onion. Making the white sauce separately really added the right creaminess to the potato/ham & veggie mixture. I used a can of chicken broth for part of the liquid, as I didn't have any bullion. Also threw in some shredded carrots I had on hand, plus 1/2 cup shredded cheese to the white sauce after it had thickened. Also, (to disguise the carrots), added a sprinkle of cheese to each bowl upon serving. Very creamy and tasty. Maybe a possibly of adding corn next time.

This is a very hearty soup which can be prepared in a crock pot. Full of veggies and great flavors.

1 lb dried navy beans
1 large smoked ham hock
1 cup chopped ham
3 garlic cloves, minced
3 carrots, chopped
3 stalks celery, thinly sliced
1 large onion, chopped
3 large potatoes, peeled and cubed
1 tablespoon fresh thyme
1 teaspoon sea salt
1/2 teaspoon pepper
5 cups water, to cover all contents

Steps:

  • Sort, wash and soak beans overnight. Drain, rinse and put in the crock pot, stirring in all of the remaining ingredients. Add enough water to cover all ingredients, typically almost to the top of the pot. I usually increase the garlic because we love it. Be careful with the salt, I add sparingly to compensate for the ham hock and the additional diced ham. Cover crock pot, cook on high for 3 hours, turn to low for 6 hours or more. I remove the ham hock, cut the meat off, cutting away the fat it in the process and place remaining meat back into the pot.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are great choices for this soup because they break down and thicken the soup nicely. Avoid waxy potatoes like Red Potatoes, as they don't break down as well and can leave the soup grainy.
  • Use good quality ham: The ham is the star of this soup, so it's important to use a good quality ham that you enjoy the flavor of. Look for a ham that is fully cooked and diced or cubed.
  • Don't overcook the vegetables: The vegetables in this soup should be tender but still have a little bit of bite to them. Overcooking them will make them mushy and bland.
