12 cornichons
3 tbsp. pickle juice
2 stalk celery
1 small yellow onion
1 hard-boiled egg
1/2 c. mayonnaise
1/2 c. sour cream
2 tbsp. finely chopped fresh parsley
2 tsp. dry mustard
1 tsp. Freshly ground pepper

Steps:

  • In a large pot over medium-high heat, bring potatoes, 1 tablespoon salt, and enough water to cover by 1 inch to a boil. Cook potatoes at a gentle boil until tender, about 20 minutes, then drain. 20 ounces baby red potatoes (scrubbed and halved)
4 scallions (chopped)

Steps:

800g small new potato
3 shallots, finely chopped
1 tbsp small capers (optional)
2 tbsp cornichons, finely chopped (optional)
3 tbsp mayonnaise, or to taste
3 tbsp extra-virgin olive oil
1 tbsp white wine vinegar
small handful parsley leaves, roughly chopped

Steps:

  • Boil the potatoes in salted water for 20 mins until just cooked, drain, then cool.

4 hard-boiled eggs (optional)
4 tablespoons white wine
3 tablespoons balsamic vinegar

4 garlic cloves, peeled
1 tablespoon kosher salt, plus
1/4 teaspoon kosher salt (or more to taste)
1 teaspoon Dijon mustard
1 tablespoon white wine vinegar
1/4 teaspoon fresh ground black pepper
1/2 cup extra virgin olive oil
20 cornichons, cut in half lengthwise
10 leaves fresh tarragon, torn

Steps:
