STUFFED APPLE FRENCH TOAST WITH PRALINE TOPPING

Stuffed Apple French Toast with Praline Topping image

This decadent and rich French toast casserole is a big hit at my Christmas breakfast each year. It's a big recipe because I'm always serving a crowd but it's easily scaled down for smaller portions. The tart apples are a beautiful balance with the deliciously sweet praline topping. I've been working on this recipe for a few years and finally got it perfect! Enjoy! Serve with warm maple syrup.

PEAR SPICE BUNDT CAKE WITH WALNUT PRALINE TOPPING

Pear Spice Bundt Cake With Walnut Praline Topping image

Found this tasty adaptation of a circa 1992 Gourmet magazine recipe on www.joythebaker.com , a delightful blog up for an award for Best New Blog of 2009 on www.2009.bloggies.com . Give it a look & see whether you'd give her a vote (I did along with a vote for www.fark.com for the esteemed lifetime achievement award). She's got some tasty recipes for sure. Anyone resurrecting the much maligned American Bundt cake gets a hat tip from me anytime. I plan to make this & halve it immediately after cooling cake but before spooning on topping - will add topping to each half with the best looking one going IMMEDIATELY to dear neighbor's home as I strongly suspect this could become a main meal substitute if allowed to remain in toto in our house, LOL.

BAKED FRENCH TOAST WITH PRALINE TOPPING

Baked French Toast With Praline Topping image

This is a wonderful, make-ahead recipe to serve at a brunch. It really takes no time at all, but it tastes incredible! I used this for our Mother's Day Brunch this year, and it was very well received. I happened to use 1% milk (which I had on hand!) and heavy cream in place of the half and half. In order to save some time, I almost left off the praline topping, but I am so glad I took the time to make it. The nice, sweet crunch of the buttery nuts complimented the dish really well. This is great served with warm maple syrup.

PUMPKIN PIE WITH PECAN PRALINE TOPPING

PUMPKIN PIE WITH PECAN PRALINE TOPPING image

Categories     Nut     Thanksgiving

Yield 1 9-inch Pie

Number Of Ingredients 21

Filling
2 cups pumpkin purée
½ cup packed light brown sugar
¼ cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon freshly grated nutmeg
1/2 teaspoon allspice
¼ teaspoon ground cloves
¼ teaspoon ground cardamom
¼ teaspoon salt
1 ½ cups cold heavy cream
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract
Topping
½ cup packed light brown sugar
6 tablespoons (3/4 stick) unsalted butter
3 tablespoons heavy cream
¼ teaspoon salt
1 teaspoon pure vanilla extract
¾ cup very coarsely chopped pecans (some halved pecan pieces are fine)

Steps:

  • 1. Put a rack in the center of the oven and preheat the oven to 400°F. 2. Roll out the pie crust, put it in a pie dish, and refrigerate until ready to fill. 3. For the filling, combine the pumpkin purée, brown and granulated sugars, cinnamon, ginger, nutmeg, allspice, cloves, cardamom, and salt in a medium saucepan set over medium heat. Cook, stirring, until the mixture begins to bubble and become fragrant, 5 to 7 minutes. Transfer the mixture to a medium bowl. Stir in the heavy cream. Whisk in the eggs and vanilla. 4. Transfer the filling to the prepared pie crust. Bake for 15 minutes. Reduce the oven temperature to 350°F and bake until the pie no longer jiggles in the center, 40 to 50 minutes. 5. Meanwhile, for the topping, in a medium saucepan set over medium-low heat, combine the brown sugar, butter, cream, and salt. Bring to a simmer and cook until thick and bubbly, 3 to 5 minutes. Remove the pan from the heat and stir in the vanilla and pecans. 6. Let the pie cool for 30 minutes before topping. The pie will settle and deflate slightly. That's great. 7. Check to see that the praline topping is still pourable. If it has hardened too much, heat it over low heat until just pourable, or microwave for 30 seconds. Pour the topping evenly over the pie. The topping may seem loose, but will thicken and harden as it cools. Let cool completely before serving. I like my pumpkin pie served cold, so I store my pie in the refrigerator until serving time. 8. The pie will last, well wrapped in the refrigerator, for up to 4 days.

1 1/2 cups pecan halves

Steps:

  • Preheat oven to 300°F. Butter rimmed baking sheet. Using fork, beat egg white and 1 tablespoon water in medium bowl until foamy. Add brown sugar and stir until sugar dissolves. Add pecan halves and toss to coat. Spread pecan mixture on prepared baking sheet (some egg white-sugar mixture will flow out onto baking sheet). Bake until nuts are deep brown and crisp, stirring occasionally, about 25 minutes. Remove from oven; stir to loosen nuts from baking sheet. Cool nuts completely on sheet. (Can be prepared 3 days ahead. Store in airtight container at room temperature.)

Sweet Potato Cheesecake With Praline Topping image

This is a recipe that I came across while browsing the December issue of Essence Magazine. Sounds like a lot of steps but very easy to make. It's an exciting twist to ordinary cheesecake, even if you are not a big sweet potato fan.

SWEET POTATO:
3 lg. eggs
5 lb. fresh sweet potatoes
2/3 c. granulated sugar
2/3 c. butter, melted
1/3 c. heavy cream
1 tsp. vanilla
1/2 tsp. ground nutmeg
1/2 tsp. ground allspice
TOPPING:
1 c. light brown sugar
1/3 c. all-purpose flour
1 c. chopped pecans
1/3 c. butter, cut in sm. pieces
12 pecan halves, for garnish

Steps:

  • Boil, drain, peel and mash sweet potatoes. Heat oven to 350 degrees. Grease a shallow 2-quart baking dish. Beat eggs in a large bowl. Stir in potatoes until blended. Add granulated sugar, melted butter, cream, vanilla and spices. Mix well. Spread evenly in prepared baking dish. TOPPING: Mix brown sugar, flour and chopped pecans in medium-size bowl. Work butter with hands until well blended. Sprinkle evenly over potato mixture. Bake 60 minutes until topping is browned and bubbling. Garnish with pecan halves.

Tips:

  • Use fresh ingredients: The quality of your ingredients will greatly impact the flavor of your praline topping. Make sure to use fresh cream, butter, sugar, and nuts.
  • Don't overcook the sugar: Overcooked sugar will become hard and brittle, so be careful not to let it get too hot. The sugar should be a light golden brown color.
  • Stir the mixture constantly: Stirring the mixture constantly will help to prevent the sugar from crystallizing and will also help to ensure that the nuts are evenly coated.
  • Be patient: Making praline topping takes time and patience. Don't rush the process, or you'll end up with a subpar product.
  • Experiment with different nuts: You can use any type of nuts you like in your praline topping. Some popular choices include pecans, walnuts, almonds, and hazelnuts.

Conclusion:

Praline topping is a delicious and versatile dessert topping that can be used on a variety of desserts, such as ice cream, cakes, and pies. It is also a great addition to breakfast foods, such as pancakes and waffles. With a little practice, you can easily make praline topping at home. So next time you're looking for a special treat, give praline topping a try.
