PRIZE-WINNING BEEF TENDERLOIN FONDUE (NO OIL)

Prize-Winning Beef Tenderloin Fondue (No Oil) image

Served to us at an elegant dinner party hosted by our friend, Anna Ivarsdottir, this amazing & easy-fix recipe won the 2nd place award for her in a cooking contest sponsored by Harvey's Bristol Cream (bottled by Harvey's of Bristol in Bristol, England since 1976). Per Wikipedia: "Contrary to popular belief, the term cream sherry does not reflect the use of any dairy ingredient. The popular story from the 1860s is that a visitor to the Harvey's cellars was given a taste of a new blend of sherry. When compared to Bristol Milk, she said 'If that be Milk, then this is Cream.' & the new blend was named." I must add "If this be 2nd place, then 1st place is beyond my imagination." & my best advice is to resist any temptation to improve this recipe. I guarantee you will want to linger at the table & savor every bite. Have I gushed enough? *Enjoy* ! :-)

Time 10m

Yield 4 6 oz servings, 4 serving(s)

Number Of Ingredients 6

17 ounces water
7 ounces soy sauce
7 ounces sherry wine (Specifically Harvey's Bristol Cream, but it was a prob to enter that ingredient)
1 chicken bouillon cube
1 1/2 lbs beef tenderloin (very thinly sliced & best shaved by a butcher)
2 white onions (med-size, sliced & separated into rings)

Steps:

  • Using paper towel, pat the shaved meat slices to remove any excess moisture. Prepare 2 plates for the table by dividing the shaved meat & sliced onion rings. Put 1 plate at ea end of your table & place the fondue pot stand in the center of the table.
  • Heat the 1st 4 ingredients to a simmering boil on the stove-top & transfer the mixture to a 2-3 qt capacity fondue pot. Put the pot on its stand at the table & light the heat source.
  • Let the fun & pleasure commence as ea person uses their fondue forks to spear the onion rings + shaved meat & cook it to their desired doneness in the fondue pot.
  • NOTES: The meat will be fork-tender, have a decidedly Asian flavor from the soy sauce & is best served w/steamed white rice. As a side-dish, Anna served snap peas w/a light balsamic glaze & coarsely broken walnuts. The combo was excellent w/the tenderloin & rice.

PAUPIETTES DE PORC - FRENCH STUFFED PORK FILLET PARCELS

Paupiettes De Porc - French Stuffed Pork Fillet Parcels image

A wonderful and very elegant dinner party dish, and one that will impress your family and friends! These little parcels can be made ahead of time and frozen uncooked. In France you can buy these ready made in most supermarkets and butchers - but these are so easy to make, that I often make my own. You can also use turkey or veal escalopes - the sauce remains the same. Serve these little parcels with seasonal vegetables, gratin potatoes or rice and pasta.

Provided by French Tart

Categories     Pork

Time 1h45m

Yield 8 Paupiettes, 4 serving(s)

Number Of Ingredients 18

8 pork escalopes or 8 thin pork steaks
salt
pepper
400 g good quality pork sausage
1/2 onion, peeled and very finely diced
1 teaspoon fresh mixed herbs or 1/4 teaspoon dried herbs
1 teaspoon olive oil
4 shallots, peeled and finely diced
2 tablespoons plain flour
2 tablespoons sun-dried tomato paste
750 ml medium sweet white wine
500 g fresh mushrooms, cleaned and thinly sliced
1 teaspoon dried orange peel or 1 teaspoon grated fresh orange zest
bay leaf
parsley
thyme
sage leaf
kitchen string

Steps:

  • Flatten the pork escalopes or pork steaks with the flat of a large knife. Salt and pepper generously.
  • Mix the finely diced onion with the sausage meat and add the herbs - mixing well with your hands. Season with black pepper.
  • Place a spoonful of the seasoned sausage meat on each pork escalope one-third of the way down the scallop. Roll the escalope around the sausage meat, tucking the meat around the stuffing until well rolled. Taking about two feet of string, place the bundle in the middle of the string, and tie; turn one-quarter turn and tie again; turn again and tie again. When you have a neatly tied packet of pork and stuffing, clip off any excess string and proceed to tie up the rest of the pork escalopes.
  • Place pork parcels in a single layer in a hot, deep sauté pan with olive oil. Brown on all sides and remove from the pan.
  • Sauté the chopped shallots in the oil left in the pan. Stir until they start to colour, then add the flour and the tomato paste. Continue to cook and stir until the mixture starts to colour then add nearly the whole bottle of wine, reserving a glass for yourself if you wish!
  • Place the pork paupiettes back in the pan with the bouquet garni and the sauce, cover, and simmer slowly for forty-five to sixty minutes.
  • Add the sliced mushrooms and orange zest to the sauce and cook uncovered for another fifteen minutes. Serve 2 paupiettes per person with plenty of sauce and with a selection of seasonal vegetables, gratin potatoes, rice or pasta.
  • To freeze: Place them in a plastic container with greaseproof paper in between them, or in a ziplock bag. Freeze for up to 3 months.
  • To defrost: Take the paupiettes out the night before you need to cook them and defrost in the fridge. Cook them as before when they have fully defrosted.

POPCORN CUPCAKES (SO CUTE!)

Popcorn Cupcakes (So Cute!) image

My youngest daughter entered these into the fair a few years back and won a 2nd place ribbon. So cute! You can use your favorite cake batter and icing recipe. To make the popcorn band your will need scissors, white construction paper and blue and/or red markers, or you can create something on a color printer such as we did. You will also need a clean paintbrush to add "butter" to the "popcorn". I think this came from Family Fun Magazine.

Provided by Cook4_6

Categories     Dessert

Time 10m

Yield 1 serving(s)

Number Of Ingredients 4

1 baked cupcake
2 tablespoons white icing
40 mini marshmallows (white or pastel yellow and white)
yellow food coloring (optional)

Steps:

  • Frost the cupcake with white icing. To create each piece of "popcorn," cut one mini marshmallow in half and squish the two pieces back together into a whole mini marshmallow, pinching firmly. Pile the finished popcorn onto the frosted cupcake.
  • For a buttery look, either dilute a drop of yellow food coloring in water and brush it on with a clean paintbrush or mix pastel yellow marshmallows in with the white.
  • To make the band, cut a strip of construction paper about 1 1/4 inches by 8 inches, or to fit your cupcake, and decorate as shown.
  • If you're creating many cupcakes, design just one band and color photocopy it. Wrap the band around the cupcake and secure with tape.
