Steps:
- Prepare the cantaloupe and cut it into wedges. I find it easier to peel the cantaloupe, once you cut it. So, first, cut the cantaloupe in half. Using a spoon, remove the seeds. Then cut each half into wedges and peel them.
- Wrap the prosciutto around the cantaloupe wedges and arrange them on a serving platter (left some wedges without prosciutto, since I had more cantaloupe to use up).
- Drizzle a little bit of balsamic glaze or quality honey (or both, if you like) If using, arrange a few basil leaves on the platter. I loved the addition of fresh basil leaves for a pop of color and freshness, but this is totally optional.
- Serve immediately or chill for a few hours until ready to serve.

Reduce the sauce to about ¼ to ⅓ cup, about 20 to 25 minutes. Allow the balsamic reduction to cool slightly. It should have a maple syrup consistency.
- Wash, dry, and cut the melon into twelve, 3/4-inch thick wedges. Trim to create about 5-inch long pieces.
- Wrap each melon wedge with one piece of prosciutto.
- Drizzle the balsamic reduction over each piece then serve immediately.

PROSCIUTTO AND MELON (PROSCIUTTO Y MELONI)
Another way-too-simple-to-post recipe, but this is a frequent appetizer in our house and so I'm putting it here so I can add it to menus, shopping lists etc. I know that lots of others tend to make salads of this combination, but I prefer just a wedge of fruit with prosciutto. The combination of sweet and salty is unbeatable!

PROSCIUTTO WITH FRESH FRUIT
Salty prosciutto paired with sweet melon is a refreshing appetizer. Serve the melon sliced in wedges or cut into small pieces with toothpicks for a bite-size starter. From the book "Lucinda's Rustic Italian Kitchen," by Lucinda Scala Quinn (Wiley).

Steps:
- Cut the fruit into the desired size. Squeeze the halved citrus over all the fruit. Crack freshly ground pepper over it, if desired. Place a piece on each plate and lay the prosciutto over each piece of fruit, cutting to size if necessary. Serve a wedge of citrus on the side.
Tips:
- Choose ripe, flavorful melon: A perfectly ripe melon will have a sweet, fragrant aroma and a slightly yielding texture when gently pressed. Avoid melons that are bruised or have soft spots.
- Use high-quality prosciutto: Look for prosciutto that is thinly sliced and has a deep red color. Avoid prosciutto that is dry or brittle.
- Keep the ingredients chilled: Before assembling the salad, chill the melon, prosciutto, and arugula. This will help to keep the salad refreshing and crisp.
- Use a light dressing: A simple vinaigrette or drizzle of olive oil is all you need to dress this salad. Avoid using heavy dressings, which can overwhelm the delicate flavors of the melon and prosciutto.
- Serve immediately: Prosciutto with melon is best enjoyed fresh. Serve the salad as soon as it is assembled so that the prosciutto doesn't have time to toughen.
Conclusion:
Prosciutto with melon is a classic Italian dish that is perfect for a light summer meal. The sweet melon, salty prosciutto, and peppery arugula are a perfect combination of flavors. With just a few simple ingredients, you can create a delicious and refreshing salad that is sure to impress your guests.
