This recipe has been around longer than I have. It is one of those recipes that I never mess up. I make this for school lunches and press into muffin tins for perfect lunch-size pieces. It never lasts long in our house.

8 cups puffed wheat cereal
⅓ cup butter
1 cup packed brown sugar
½ cup corn syrup
2 tablespoons cocoa powder
1 teaspoon vanilla extract

Steps:

  • Pour cereal into a large bowl.
  • Melt butter in a saucepan over medium-low heat. Stir brown sugar, corn syrup, cocoa powder, and vanilla extract into melted butter; cook until mixture begins to bubble, 5 to 10 minutes. 10 cups puffed wheat cereal
1 cup corn syrup
1 cup white sugar
½ cup butter
6 tablespoons unsweetened cocoa powder
¼ cup brown sugar
1 teaspoon vanilla extract

Steps:

  • Grease a 9x13-inch pan. Place puffed wheat in a large heat-proof bowl; set aside.
  • Bring corn syrup, white sugar, butter, cocoa powder, and brown sugar to a boil in a heavy saucepan. Remove cocoa mixture from heat; stir in vanilla extract. Pour cocoa mixture over puffed wheat cereal; stir until well combined.

1/3 cup butter
1 cup brown sugar
1/2 cup molasses
1/2 cup corn syrup
1/2 teaspoon vanilla
12 cups puffed wheat cereal

Steps:

  • Boil butter, brown sugar, molasses, and corn syrup for 5 minutes.
  • Add vanilla.
  • Prepare puffed wheat in a large bowl. Butter a 12x9 pan.
  • Add boiling syrup to puffed wheat and stir well.
  • Quickly press mix into baking dish and press down with the spoon.
  • Cool, cut, and enjoy!

Everything is done in the microwave. A great, quick dessert to make with the kids. It looks like there are a lot of steps, but that's just because I went into lots of details. Plan for at least 30 minutes of cooling time before serving.

8 cups puffed wheat cereal
6 cups marshmallows (about 40 large ones)
1 tablespoon margarine or 1 tablespoon butter
1 tablespoon skim milk
1 teaspoon vanilla extract

Steps:

  • Measure out cereal; set aside.
  • Line a 9x9 baking dish with wax paper or with greased plastic wrap. Prepare a second sheet for the top. Grease a wooden spoon.
  • In a LARGE* microwavable bowl, melt butter - about 30 seconds.
  • Turn the bowl in order to coat sides with melted butter.
  • Add milk and vanilla; return to the microwave. Heat until marshmallows are huge and puffed-up (watch that they don't overflow) - about 2 or 3 minutes.
  • With your greased spoon, stir until marshmallows are well mixed with butter, milk, and vanilla - there should be no lumps (it looks like marshmallow cream).
  • Incorporate puffed wheat, making sure to coat all the cereal.
  • Pour into prepared pan; cover with second piece of wax paper. Press FIRMLY into pan.
  • Refrigerate at least 30 minutes.
  • With the help of the paper, lift out and place on a cutting board or counter top; remove top layer of paper. Using a sharp, wet knife, cut into squares. If knife starts sticking, just re-wet it.
  • Serve, making sure to remove any paper from the bottom.
  • Keep refrigerated.
  • * If you don't have a large enough microwavable bowl, you can put the puffed wheat into a regular bowl and pour the melted marshmallow over top. You will need a bowl containing at least 2 quarts to prevent marshmallows from spilling over.
