PULLED PORK WITH GINGER SAUCE

Pulled Pork with Ginger Sauce image

It's almost sacrilegious for a South Carolinian from the capitol city to make any sauce for pulled pork except mustard-based. But we love this Asian-inspired Ginger Sauce. Wonderful in a sandwich it's also great over rice. -Mary Marlowe Leverette, Columbia, South Carolina

Steps:

  • Start the night or morning before you want to eat the pork. Mix together all the ingredients of the marinade in a lidded casserole dish, then stir in the pork and onion and ensure it's thoroughly coated. Cover and put in the fridge for a couple of hours or overnight.
  • Put the casserole dish, with the lid on, in the oven at 150C for 4 hours. Check after about 3 hours to ensure the pork is still submerged in liquid - if it isn't, add more ginger beer if you have it or some water if not.
  • Remove from the oven and drain the pork, reserving the liquid. Put the liquid in a saucepan over a medium heat and bubble, stirring occasionally, to thicken. (If you are impatient, you could mix 1 tsp of cornflour with cold water, then tip the mixture into the sauce and stir - this will cause the sauce to thicken faster).
  • While the sauce is reducing, shred the pork with 2 forks. It should come apart easily into classic pulled-pork strands.
  • Mix the thickened sauce back into the pork and serve inside buns, with salad, pickles etc if you like them.

PULLED PORK (CROCK POT)

Pulled Pork (Crock Pot) image

I found this pulled pork recipe years ago, and it's a favorite at potlucks. Freezes well for easy quick meals.

Time 18h30m

Yield 10 serving(s)

Number Of Ingredients 5

4 lbs pork roast (shoulder or butt)
2 large onions
1 cup ginger ale
1 (18 ounce) bottle favorite barbecue sauce (I like Sweet Baby Ray's)
barbecue sauce, for serving (optional)

Steps:

  • Slice one onion and place in crock pot.
  • Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. See Note2 below regarding amount of time needed!
  • Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away.
  • Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW.
  • Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well.
  • TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave.
  • Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid.
  • Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. Update: I recently bought a bigger crockpot, I think 5 or 6 qts. I cooked a 6 lb pork shoulder in it for 8 hours and it was shreddable at that point. Shredded, added the sauce, and cooked for another hour or so to meld everything. So use your best judgment on timing!
  • Note3: You might want to turn your roast over after it's cooked a while, to ensure more even cooking. I think this may depend on the size and shape of your roast and the size of your slow cooker. Remember that each time you remove the lid you lose heat and be careful, as turning a large piece of meat is awkward.
  • Note4: my sister says this takes 2 hours in the Instapot. I don't have one, up to you to figure out the steps.

PULLED PORK FINISHING SAUCE

Pulled Pork Finishing Sauce image

This thin, vinegar-based finishing sauce, which differs from a BBQ sauce, is the secret ingredient to kick up my smoked pulled pork. After you've pulled your pork butt, drizzle over the meat and combine. The vinegar adds contrast to the smoky flavor and cuts through the fat in the meat. It also helps mellow out the darker, gamier-tasting parts of the butt. This makes enough for a 8 pound pork butt/shoulder.

Tips:

  • Choose the right cut of pork: Pork shoulder or pork butt are the best cuts for pulled pork because they have a lot of connective tissue that breaks down during cooking, resulting in tender, juicy meat.
  • Use a flavorful rub: A good rub will help to enhance the flavor of the pork. Be sure to use a variety of spices, including salt, pepper, paprika, garlic powder, and onion powder.
  • Cook the pork slowly and low: Pulled pork should be cooked at a low temperature (around 225 degrees Fahrenheit) for a long period of time (6-8 hours). This will allow the connective tissue to break down and the meat to become fall-apart tender.
  • Use a Dutch oven or slow cooker: A Dutch oven or slow cooker is a great way to cook pulled pork because it allows the meat to cook evenly and slowly. You can also use a smoker, if you have one.
  • Add moisture to the pork: Pulled pork can sometimes dry out during cooking, so it's important to add some moisture to the meat. You can do this by adding a cup of water or chicken broth to the Dutch oven or slow cooker, or by spritzing the meat with water or apple cider vinegar every hour or so.
  • Let the pork rest before shredding: Once the pork is cooked, let it rest for 15-20 minutes before shredding. This will allow the juices to redistribute throughout the meat, making it more tender and flavorful.

Conclusion:

Pulled pork is a delicious and versatile dish that can be enjoyed in a variety of ways. It can be served on buns, in tacos, or even on top of nachos. It's also a great way to use up leftover pork roast. With a few simple tips, you can make pulled pork that is fall-apart tender and packed with flavor.
