DELICIOUS PUMPKIN-PECAN COOKIES
A very good friend of mine gave me this pumpkin-pecan cookie recipe when I was searching for just the right cookie around Thanksgiving. These were by far the best I have ever tried and are simple to make. The recipe can be cut in half, because as is, it makes around 2 dozen. I would also love to know any alterations that make them any better! Enjoy!

Tips:
- Use a food processor to finely chop the pecans and peanuts. This will help them distribute evenly throughout the cookie bars.
- Be sure to use canned pumpkin puree, not pumpkin pie filling. Pumpkin pie filling contains spices and sugar, which will alter the taste of the cookie bars.
- If you don't have a 9x13 inch baking pan, you can use a 10x15 inch pan. Just be sure to adjust the baking time accordingly.
- Let the cookie bars cool completely before cutting them into bars. This will help them hold their shape.
