1 large egg, lightly beaten
3 large eggs
3 large egg yolks
3/4 cup dark muscovado sugar
1/4 cup granulated sugar

1 1/2 cups canned pumpkin puree
1 1/4 teaspoons ground cinnamon, plus more for the top

  • To make the cinnamon crunch, preheat the oven to 350 degrees F.

Fit a 9-inch pie plate with one piece of dough. Reserve 2nd piece of dough for another time. Refrigerate while preparing filling Filling:Place baking sheet in oven and preheat to 450°F. Whisk first 8 ingredients together in large bowl to blend. Whisk in pumpkin, molasses and eggs, then cream. Pour mixture into frozen crust. Place pie on preheated baking sheet in oven. Bake 10 minutes. Reduce heat to 325°F and bake until sides puff and center is just set, about 40 minutes. Cool completely. Walnut-Crunch Topping:In a small saucepan, over low heat, melt butter. Stir in walnuts and sugar and mix until well mixed. Spoon evenly over pie. Broil pie 3 minutes, 5 to 7 inches from broiler, or until topping is golden and sugar dissolves. Cool pie again on wire rack. Whipped Cream topping: In a small bowl, beat heavy whipping cream and powered sugar with electric mixer until stiff peaks form. Pipe around edge of cooled pie.

This recipe is straight out of a Southern Living Holiday Edition. It tastes delicious as an after dinner desert or a great breakfast side to coffee! A cute serving idea is to put each serving in a plain tea-cup and saucer then top with whipped cream.

1 (15 ounce) can pumpkin
1 (12 ounce) can evaporated milk
3 large eggs
1 1/4 cups sugar
4 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 (18 ounce) box yellow cake mix
1 cup pecans, chopped
3/4 cup crisco butter flavor shortening, melted
whipped cream

Steps:

  • Coat a 13 x 9-inch pan with cooking spray.
  • Combine pumpkin and next 5 ingredients in a large bowl; pour into pan.
  • Sprinkle cake mix over pumpkin mixture, and top with pecans. Drizzle with melted shortening.
  • Bake at 350F for 40 to 45 minutes or until golden brown.
  • Let cool 2 hours or until completely cool.
  • Serve with whipped cream!

12 oz can(s) evaporated milk
3 large eggs
1 1/2 c sugar
1/8 tsp ground ginger**
1/8 tsp ground nutmeg**
1/4 tsp ground cloves**
1 1/2 tsp ground cinnamon**
1/2 tsp salt
1 pkg duncan hines yellow or spice cake mix
1 c pecans, chopped
1 c butter, melted
whipped topping

Steps:

  • 1. Preheat oven to 350 degrees. Grease the bottom of a 9 x 13 x 2 inch pan.
  • 2. Combine pumpkin, evaporated milk, eggs, sugar, spices and salt in a large bowl. Stir until well blended. Pour into pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with pecans. Drizzle with melted butter.
  • 3. Bake at 350 degree for 50 to 55 minutes or until golden. Cool completely. Serve with whipped topping. Refrigerate leftovers
  • 4. **The above spices are my addition, the original recipe used only 4 teaspoons of pumpkin pie spice. I thought it needed more.

11 Diamond of California® Pecan Halves

Steps:

  • Line a 9-in. pie plate with pastry; trim and flute edges. In a large bowl, beat the eggs, pumpkin, milk, brown sugar, syrup, flour, pie spice and salt until blended. Pour into pastry. Bake at 425° for 15 minutes. Reduce heat to 350°; bake 30-35 minutes longer or until a knife inserted near the center comes out clean. Cover edges with foil during the last 30 minutes to prevent overbrowning if necessary. Cool on a wire rack. Top pie with whipped topping and pecans; sprinkle with cinnamon if desired.
