Yield 4

Number Of Ingredients 9

pinch of salt
2 pound pumpkin tortellini
4 ounce butter
8 ounce chicken stock
4 sage leaves
salt and pepper, to taste
chopped parsley, for garnish
2 -3 ounces pecorino, for serving
1 -2 teaspoons granulated honey, for serving

Steps:

  • Bring a large pot of water to a boil with a perforated pasta insert and add a generous pinch of salt. Once the water is boiling, add the tortellini, stir, and cover. This will take about 5-6 minutes.
  • Meanwhile, heat a large sauté pan over medium heat. When the pan is hot, add the butter. When light smoke appears, add the chicken stock to stop the browning of the butter. Then, add the sage and season with salt and pepper, to taste. Simmer for 2 minutes to allow the herbs and butter to marry.
  • By now the tortellini should be ready. Remove the lid. Pull up on the handles and allow the water to drain right back into the pot. When completely drained, pour the tortellini into the butter-sage sauce and simmer for 1 minute. Add parsley and toss. Now you're ready to plate the pasta. Grate the pecorino directly over each plate and then drizzle with a little of the granulated honey.

Time 1h55m

Yield 8

Number Of Ingredients 16

3 cups all-purpose flour
3 tablespoons all-purpose flour
4 large eggs
2 teaspoons salt
1 tablespoon water
1 small pumpkin
1 tablespoon olive oil
¼ cup diced onion
2 tablespoons finely chopped fresh sage
1 tablespoon heavy cream
1 large egg
salt and ground black pepper to taste
½ cup salted butter
2 tablespoons finely chopped fresh sage
salt and ground black pepper to taste
¼ cup shredded Parmesan cheese

Steps:

  • Combine flour, eggs, and salt in the bowl of a food processor; pulse until dough holds together. Transfer to a clean work surface and knead until smooth, about 10 minutes. If dough feels too dry, add water, a little at a time, and continue kneading. Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Wash pumpkin, slice into 8 pieces, and discard seeds. Transfer pumpkin slices to the prepared baking sheet and cover with another sheet of foil to create a steaming pouch.
  • Cook pumpkin in the preheated oven until tender, about 30 minutes. Remove and let cool.
  • While pumpkin is cooling, heat oil in a small pan over medium heat. Add onion and sage; cook and stir until onion is soft and translucent, about 5 minutes. Remove from heat.
  • Scoop pumpkin flesh out of the skin and into a stand mixer. Add onion mixture and heavy cream; beat for a bit until mixture cools down. Mix in egg, salt, and pepper; set filling aside.
  • Lightly flour a work surface. Remove pasta dough from the refrigerator and divide into 8 equal portions. Shape each portion into an oval-shaped flat disc. Run each disc through a pasta roller until it reaches the desired thickness and you have 8 long sheets of pasta. Lightly dust each sheet with flour.
  • Lay one sheet of pasta on your work surface. Drop tablespoonfuls of filling for each ravioli evenly down the length of the sheet, then lay a second sheet of pasta on top. Use your fingers to press down and seal the pasta around each bit of filling, and cut ravioli with a pasta cutter or round glass. Repeat three more times with remaining 6 sheets of pasta and filling.
  • Bring a large pot of lightly salted water to a boil. Cook ravioli in batches in the boiling water until tender yet firm to the bite, 3 to 5 minutes per batch.
  • Meanwhile, heat butter and sage for sauce in a large saucepan over medium heat. Bring to a simmer and cook, stirring frequently, until butter is browned, fragrant, and foamy, with brown bits in it, 5 to 10 minutes. Be careful not to burn it. Season with salt and pepper. Add cooked ravioli to the sauce and sprinkle with Parmesan cheese.

Yield Serves 4

Number Of Ingredients 3

3 bunches fresh sage
1 pound good-quality tortellini
7 tablespoons unsalted butter

Steps:

  • Wash sage and dry well. Remove 6 leaves and cut into very fine julienne. Coarsely chop enough sage to get 1/2 packed cup.
  • Bring a large pot of salted water to a boil. Add tortellini and cook until al dente, about 8 minutes.
  • Melt 6 tablespoons butter in a large nonstick skillet. Add chopped sage, a pinch of salt, and freshly ground black pepper. Cook over medium heat until butter just begins to brown and bubble; the sage should get crispy.
  • Drain tortellini in a colander, saving 1/4 cup cooking water. Immediately put pasta in a large warm bowl, adding remaining butter. Toss with melted butter-sage mixture and add enough cooking water to make a smooth sauce. Add salt and pepper to taste and sprinkle with julienned sage. Divide immediately among warm pasta bowls.

Tips:

- To make the perfect pumpkin puree, choose a ripe, flavorful pumpkin and roast it until tender. - For a richer flavor, use a combination of butter and olive oil to cook the sage and garlic. - If you don't have tortellini, you can use any other type of pasta, such as penne or shells. - To make the dish even more flavorful, add a pinch of red pepper flakes or a sprinkle of grated Parmesan cheese. - If you are vegan, you can omit the butter and use a plant-based alternative, such as vegan butter or olive oil.

Conclusion:

This pumpkin sage butter tortellini is a delicious and easy-to-make meal that is perfect for a busy weeknight dinner. The combination of pumpkin, sage, and butter creates a rich and flavorful sauce that pairs perfectly with the tender tortellini. This dish is also very versatile and can be customized to your liking. For example, you can add other vegetables, such as spinach or mushrooms, or you can use a different type of cheese, such as ricotta or feta. No matter how you choose to make it, this pumpkin sage butter tortellini is sure to be a hit with your family and friends.
