SOUP FOR TWO: CELERY ROOT PUREE

Soup for Two: Celery Root Puree image

The soup takes about an hour to prepare -- mainly because the vegetables need to cook for about 30 minutes to become soft enough to puree. When serving the soup, pair it with a frisee salad.

CELERY ROOT PUREE

Celery Root Puree image

I joke that celery root tastes like celery if celery actually tasted good; for the most part, this is true. The flavor is quite mild and pleasant, and the texture is somewhat similar to mashed potatoes. This simple puree is a very versatile side dish, but the tasty root will also work sliced thin and layered in a gratin, either with or without potatoes. I hope you give this great fall and winter vegetable a try soon.

PURéED BROCCOLI AND CELERY SOUP

Puréed Broccoli and Celery Soup image

Celery adds a new dimension to the flavor of this soup and harmonizes with the broccoli. When you cook broccoli for more than 8 to 10 minutes the color fades, so I add a little spinach at the end of cooking to brighten up the color.

Provided by Martha Rose Shulman

Categories     dinner, soups and stews, main course

Time 45m

Yield Serves 6

Number Of Ingredients 14

1 tablespoon extra virgin olive oil
1 medium onion, chopped
4 stalks celery, diced
2 to 4 garlic cloves, to taste, minced
2 pounds broccoli, mostly crowns, chopped; stems, if using, peeled and diced
6 ounces potatoes, peeled and diced, or 1/2 cup medium grain rice
2 quarts water or vegetable stock
A bouquet garni made with a bay leaf, a Parmesan rind, and a couple of sprigs each thyme and parsley
Salt and freshly ground pepper to taste
1 1/2 ounces spinach leaves or baby spinach (1 cup, tightly packed)
2 tablespoons chopped fresh herbs, such as parsley, tarragon, chives, for garnish
A drizzle of olive oil
a swirl of crème fraiche or plain yogurt
a sprinkle of freshly grated Parmesan

Steps:

  • Heat the olive oil over medium heat in a large, heavy soup pot or Dutch oven and add the onion and celery. Cook, stirring, until tender, about 5 to 8 minutes. Do not allow these ingredients to brown. Add a generous pinch of salt to prevent this from happening (the salt draws out liquid from the vegetables). Add the garlic and cook, stirring, until the garlic smells fragrant, 30 seconds to 1 minute.
  • Add the broccoli, potatoes or rice, water or stock, bouquet garni, and salt, and bring to a boil. Reduce the heat, cover and simmer 30 minutes. Remove the bouquet garni. Stir in the spinach and let sit for a minute off the heat. Add freshly ground pepper, taste and adjust salt.
  • Using a hand blender, or in batches in a regular blender, purée the soup. If using a regular blender fill only half way and cover the top with a towel pulled down tight, rather than airtight with the lid, because hot soup will jump and push the top off if the blender is closed airtight. Return to the pot and heat through, stirring. Adjust seasoning to taste with salt and pepper. Serve, topping each bowl with a sprinkle of chopped herbs and with other garnishes of your choice.

CHESTNUT PUREE FOR CELERY ROOT SOUP WITH BRUSSELS SPROUTS AND CHESTNUTS

Chestnut Puree for Celery Root Soup with Brussels Sprouts and Chestnuts image

This puree is used as a garnish for chef Michael Anthony's Celery Root Soup with Brussels Sprouts and Chestnuts.Photo credit: Ellen Silverman

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Nuts & Seeds

Number Of Ingredients 9

30 chestnuts
1 tablespoon olive oil
1 cup shallots, minced
2 cloves garlic, minced
8 cups low-sodium store-bought or homemade Vegetable Stock
1/4 cup molasses
1/4 cup maple syrup
3 cloves Whole Roasted Garlic
1/4 cup (1/2 stick) unsalted butter

Steps:

  • Preheat oven to 375 degrees. Using a small sharp knife or a chestnut knife, carve an "X" in the flat side of each chestnut. Place chestnuts in an even layer, "X" side-down on a baking sheet. Transfer to oven and roast until opened, 10 to 12 minutes. Peel immediately, using a towel if chestnuts are too hot to touch; coarsely chop.
  • Heat olive oil in a medium saucepan over medium heat. Add shallots and garlic and cook, stirring, until soft and translucent. Add chestnuts and cook for about 1 minute. Add vegetable stock; bring to a simmer and cook for 30 minutes.
  • Add molasses, maple syrup, and roasted garlic. Bring to a simmer and continue cooking until chestnuts are soft, about 30 minutes more. Working in batches, carefully transfer to the jar of a blender; blend until smooth.

Tips:

  • Choose the right celery root: Look for celery roots that are firm, have a smooth skin, and are free of blemishes or bruises.
  • Clean the celery root properly: Use a vegetable brush to scrub the celery root under running water. Remove any dirt or debris from the root before cooking.
  • Cook the celery root until it's tender: The celery root should be cooked until it's soft enough to easily pierce with a fork. This usually takes about 20-30 minutes.
  • Don't overcook the celery root: Overcooking the celery root will make it mushy and bland. Be careful not to cook it for more than 30 minutes.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a splash of cream or milk for a richer flavor.
  • Garnish the soup with fresh herbs: Fresh herbs like parsley, chives, or dill will add a pop of color and flavor to the soup.

Conclusion:

Celery root soup is a delicious and nutritious dish that can be enjoyed as a starter or a main course. It's easy to make and can be customized to your liking. With its creamy texture and earthy flavor, celery root soup is a comforting and satisfying meal that's perfect for a cold winter day.
