Time 1h10m

Yield 8

Number Of Ingredients 14

½ cup butter
1 small carrot, finely diced
1 stalk celery, diced
1 small onion, finely diced
1 clove garlic, minced
½ cup all-purpose flour
1 ½ cups white corn kernels
1 ½ cups yellow corn kernels
4 russet potatoes, diced
2 cooked rotisserie chicken breast halves, shredded
4 cups chicken stock, divided
2 ½ cups half-and-half
1 pinch nutmeg
salt and ground black pepper to taste

Steps:

  • Melt butter in a large saucepan over medium heat; cook and stir carrot, celery, onion, and garlic into hot butter until slightly softened, about 2 minutes. Stir flour into mixture to make a paste; cook until lightly browned and flour gives off a slightly toasted smell, about 5 minutes. Watch carefully, flour burns easily. Remove saucepan from heat and set aside to cool, about 15 minutes.
  • Stir white and yellow corn, potatoes, chicken, and 3 cups of chicken stock in a large soup pot over medium heat. Whisk remaining 1 cup chicken stock into vegetables and flour mixture until thoroughly combined. Stir mixture into ingredients in soup pot. Bring to a simmer, stirring constantly, until thick, about 5 minutes.
  • Stir half-and-half, nutmeg, salt, and black pepper into chowder. Bring back to a boil, reduce heat to low, and simmer until potatoes are tender, about 20 minutes.

This soup is creamy as well as hearty and filling; easy to prepare and budget-friendly. The corn adds a tiny bit of sweetness to the taste. For variety, you could probably add some peas and/or carrots; shredded cheddar for topping upon serving. Add some nice warm bread to accompany the meal. Tips:

  • Use high-quality ingredients. Fresh vegetables, flavorful chicken, and smoky ham will make your chowder taste its best.
  • Don't overcrowd the pot. If you add too much chicken or ham, the chowder will be watery and bland. Stick to about 1 pound of chicken and 1/2 pound of ham for a flavorful, creamy chowder.
  • Cook the vegetables until they're tender but still have a little bite. You don't want them to be mushy!
  • Use a good-quality chicken stock. This will add a lot of flavor to the chowder. If you don't have any on hand, you can use water instead, but the flavor will be less robust.
  • Don't boil the chowder. Bring it to a simmer and then let it cook gently for about 30 minutes. This will help the flavors to meld and develop.
  • Serve the chowder with a side of crusty bread or crackers. This will help to soak up the delicious broth.

Conclusion:

Chicken and ham corn chowder is a hearty, comforting soup that's perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy meal, give this chowder a try!
