1 can (20 ounces) unsweetened pineapple chunks
1 package (12 ounces) frozen fully cooked homestyle or Swedish meatballs, thawed
1 large green pepper, cut into 1-inch pieces
3 tablespoons cornstarch
1/3 cup cold water
3 tablespoons cider vinegar
1 tablespoon soy sauce
1/2 cup packed brown sugar
Hot cooked rice, optional
Thinly sliced green onions, optional

Steps:

  • Drain pineapple, reserving juice. Set pineapple aside. Add enough water to juice if needed to measure 1 cup. In a large skillet over medium heat, cook the meatballs, green pepper and juice mixture until heated through., In a small bowl, combine the cornstarch, cold water, vinegar and soy sauce until smooth. I make this using my "Chelle's Famous Turkey Meatballs". This is one of my family's favorites...even my husband's family (mother-in-law and her friends, sister-in-law, brother-in-laws, etc.) All seem to like these. I like to serve them with my Crab Wontons as an appetizer when serving to guests. ;) They go great in a crockpot for parties, bbq's, potlucks, etc. and I am usually requested to bring them!! Amounts can vary depending on number of meatballs you make, as will times. ;)

3 can(s) sweet and sour sauce, contadina brand (16oz each)
16 ounce(s) sliced water chestnuts (2- 8 oz cans)
1 can(s) baby corn (15oz)
1/2 cup(s) white wine
1 medium green pepper, chopped
1 medium red pepper, chopped
1 can(s) chunk pineapple (5oz)

Steps:

  • Combine red and green pepper, if desired, in pan and cook for 3-4 minutes or until tender.

1/4 cup water
1/4 cup ketchup
1 cup pineapple juice
3/4 cup apple cider vinegar

1/2 cup water
1 lb ground beef
1 egg, lightly beaten
1/4 cup applesauce
1 tablespoon ponzu sauce, lime citrus dressing and sauce

1 cup fresh soft breadcrumbs, measure well packed (add extra if your meatballs need more binding to hold their shape)

Steps:

  • For the sauce - mix the cornstarch with ¼ cup water in a small bowl. Set aside.

  • Pour the sweet and sour sauce over the meatballs , ensuring that they are all covered.
  • Bake for 30 minutes and stir. Continue to bake for another 15 minutes and stir again. Check for doneness and bake longer if needed.
  • Serve over rice or noodles for a main meal. Lightly sprinkle each meal with toasted sesame seeds or finely sliced green onions for presentation if desired.
  • Can be served as cocktail meatballs in a single large bowl with cocktail forks or toothpicks.

I first tasted these tasty little meatballs at my friend Shirley's house party over 30 years ago. I asked for the recipe and have been making them ever since, sometimes serving them as an appetizer and other times as a meal.

2 lbs lean ground beef (can use frozen meatballs)
14 ounces chili sauce (I prefer Del Monte)
1 cup grape jelly (can sub sugar-free)
1 teaspoon fresh lemon juice
1 tablespoon brown sugar, more if desired (used to sprinkle)

Steps:

  • Mix chili sauce, grape jelly, and lemon juice in a medium sized saucepan.
  • Sprinkle sugar over all and stir well.
  • Cook till mixture liquifies.
  • Form little meatballs (about one inch in diameter or larger, if you prefer) and drop into sauce, making sure you don't splash as it will be hot. (If you moisten your hands with water or oil the meat will not adhere to your hands as readily). Cover.
  • Cook for 1/2 hour, but after 15 minutes, taste sauce and adjust, if necessary.
  • These can be served with their sauce on a bed of noodles, or placed on a platter with tootpicks for appetizers without their sauce.

1/2 cup plain dry breadcrumbs
1/4 cup minced celery
1/4 cup minced fresh parsley
1 large egg
1/2 teaspoon ground black pepper
1 1-ounce package dry onion soup mix
1 12-ounce bottle home-style chili sauce
3/4 cup water
1/2 cup golden raisins
1/2 cup tarragon vinegar
2 tablespoons sugar

Steps:

  • Combine ground beef, breadcrumbs, celery, parsley, egg and 1/2 teaspoon pepper in medium bowl. Add 1 1/2 tablespoons soup mix; blend well. Using moistened hands, form mixture into 1-inch-diameter balls and place on sheet of foil.
  • Combine chili sauce, 3/4 cup water, raisins, vinegar, sugar and remaining soup mix in heavy large pot. Bring to simmer over medium-low heat. Drop meatballs into sauce. Cover pot and simmer until meatballs are cooked through and sauce thickens, stirring occasionally, about 30 minutes.
