I came up with this one summer when I was on a low carb diet, it is similar to a potato salad but made without the potato.

1 head cauliflower, trimmed and cut into bite-size florets
¾ cup mayonnaise
1 tablespoon mustard
1 teaspoon salt
ground black pepper to taste
3 hard boiled eggs, chopped
1 onion, chopped
¾ cup frozen green peas, thawed
¼ cup dill pickles, chopped
3 slices crisply cooked bacon, crumbled

Steps:

  • Place cauliflower in a large saucepan and cover with water. Bring to a boil and cook until just fork tender, about 10 minutes. Drain and cool slightly.
  • In a large bowl whisk together the mayonnaise, mustard, salt, and pepper. Add the cauliflower, eggs, onion, peas, dill pickles, and bacon to the dressing and stir until well coated. Cover and refrigerate for 2 to 24 hours. The longer the cauliflower salad chills, the better the flavor.

Bacon, cheese, tomatoes and olives really dress up plain old cauliflower. Even my husband had to admit this salad is delicious!

6 cups fresh cauliflowerets
3 plum tomatoes, chopped
1 cup thinly sliced green onions
1 cup shredded cheddar cheese
1/2 cup sliced pimiento-stuffed olives
1/2 cup mayonnaise
12 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the cauliflower, tomatoes, onions, cheese and olives. Add mayonnaise; toss to coat. Cover and refrigerate for at least 1 hour. Just before serving, sprinkle with bacon.

1 2-pound head of cauliflower or 1 pound ready-cut florettes
2 tablespoons balsamic vinegar
1 teaspoon olive oil
1/2 teaspoon turmeric
1/2 teaspoon ground coriander
Cilantro (enough for 1 tablespoon chopped)
1/8 teaspoon salt (optional)

Steps:

  • Break cauliflower into bite-size florettes and steam 7 to 10 minutes.
  • In bowl large enough to hold florettes, whisk together vinegar, oil, turmeric and coriander.
  • Wash, dry and chop cilantro to make 1 tablespoon.
  • When cauliflower is cooked, drain and stir into bowl, coating throughly with dressing. Sprinkle with cilantro and season with salt.

1 medium-size cauliflower, about 1 1/2 pounds
1/4 cup milk
Salt to taste
2 tablespoons olive oil
1 tablespoon red-wine vinegar
Freshly ground pepper to taste
1 tablespoon drained capers
2 tablespoons finely chopped parsley

Steps:

  • Cut the cauliflower into florets. Place them in a saucepan and add cold water to cover. Add the milk and salt and bring to a boil. Simmer for about 10 minutes or until tender but not mushy. Drain well and let cool.
  • Place the oil and vinegar in a salad bowl, add salt and pepper, and blend well with a whisk.
  • Add cauliflower, capers, parsley, more pepper to taste, toss well and serve.

10 slices bacon, cut into 1/2 inch slices
1 cup mayonnaise or salad dressing
1/4 cup sugar
1 medium head cauliflower (about 2 lb), separated into florets
1 small onion, finely chopped
1 small green bell pepper, finely chopped
8 oz Colby Monterey jack cheese, cut into 1/2 inch cubes

Steps:

  • In 12-inch nonstick skillet over medium heat, cook bacon pieces 5 to 7 minutes or until crisp. Drain on paper towels; set aside.
  • In large bowl, stir together mayonnaise and sugar. Stir in cauliflower, onion, and bell pepper until vegetables are coated with mayonnaise mixture.
  • Just before serving, stir in cheese. Sprinkle with bacon.
