MINT-CHOCOLATE CHUNK BROWNIES
A variation on a classic dessert. These mint-chocolate brownies come out perfect every time, and people will go crazy over the subtle hint of mint, and the chunks of chocolate they'll bite into. They are a guaranteed crowd-pleaser!

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.
- Combine flour, baking soda, and salt in a medium bowl.
- Combine sugar, butter, and water in a pot over medium heat; bring to a boil. Immediately remove from the heat and add 1/2 of the semisweet chocolate, vanilla extract, and mint extract. Stir until smooth and chocolate has melted. Transfer to a large bowl and allow to cool for 10 minutes.
- Add eggs, 1 at a time, to the chocolate mixture, beating well after each addition. Gradually add flour mixture and mix until smooth. Fold in remaining chocolate. Spread batter into the prepared baking pan.
- Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 30 minutes. Let cool completely before slicing.

- Coat bottom of an 8-inch square baking pan with cooking spray.
- Combine butter and mints in a 2 cup glass container; microwave at high 30 seconds or until soft.
- Stir until smooth; set aside.
- Combine flour, baking soda, and salt in a bowl, set aside.
- Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed until well blended.
- Add mint mixture and beat well.
- Add flour mixture and beat at low speed just until blended.
- Pour batter into pan and bake at 350°F for 20 minutes or until a toothpick inserted in center comes out clean.
- Cool completely.
QUICK JUNIOR MINT BROWNIES
You can use your favorite brownie recipe if you prefer. This is one of those "hurry up, I need to take a dessert" recipes for me! It is always well received. I use Pillsbury Traditional Fudge Brownie mix. To cut brownies smoothly, use a putty knife or a plastic knife.

Steps:
- Prepare brownie mix according to package directions in a 9x13 pan (they will be thin).
- Remove baked brownies from oven and pour the Junior Mints over the brownies.
- Cover pan tightly with aluminum foil and allow to sit for 10 minutes.
- Remove foil and swirl melted mints all over the top of the brownies.
- Allow to cool completely.
- The mints will form a hard chocolate-mint frosting.
