QUICK AND SPICY TOMATO SOUP

Yield 4 people

Number Of Ingredients 11

3 tablespoons olive oil
2 carrots, peeled and chopped
1 small onion, chopped
1 clove garlic, minced
1 26 oz. jar marinara sauce
4 cups chicken broth
1 15 oz. can cannellini beans, drained and rinsed
1/2 teaspoon red pepper flakes
1/2 cup small pasta
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion and garlic and saute until soft, about 2 minutes. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper. Simmer for 10 minutes. Ladle into bowls and serve.

Tips:

  • Use ripe, juicy tomatoes: This will give your soup the best flavor. If you don't have fresh tomatoes, you can use canned diced tomatoes, but be sure to drain them well before using.
  • Don't overcrowd the pot: When you're sautéing the vegetables, don't overcrowd the pot or they won't cook evenly. If necessary, cook the vegetables in batches.
  • Use a good quality broth: The broth is the base of your soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
  • Season the soup to taste: Once the soup is simmering, taste it and adjust the seasonings as needed. You may need to add more salt, pepper, or chili powder.
  • Serve the soup with your favorite toppings: Some popular toppings for tomato soup include croutons, grated Parmesan cheese, and chopped fresh basil.

Conclusion:

This quick and spicy tomato soup is a delicious and easy meal that can be enjoyed all year round. It's perfect for a quick weeknight dinner or a cozy weekend lunch. With just a few simple ingredients, you can have a flavorful and satisfying soup that the whole family will love. So next time you're looking for a quick and easy meal, give this recipe a try!
