Categories     Salad

Time 20m

Number Of Ingredients 10

1/4 cup sliced almonds
5 to 6 ounces baby arugula
2 oranges, peeled and sliced into thin rounds
2 ounces goat cheese, crumbled (about 1/2 cup)
1/4 cup thinly sliced and roughly chopped radishes
Pinch of ground cinnamon, to sprinkle on top
1/4 cup extra-virgin olive oil
3 tablespoons lemon juice
1 1/2 teaspoons honey
1/4 teaspoon salt

Steps:

  • First, toast the almonds: In a small skillet over medium heat, warm the almonds until they are fragrant and starting to turn golden on the edges, stirring frequently (careful, they'll burn!), about 5 minutes. Transfer them to a bowl to cool.
  • Place the arugula on a large serving platter or into a large serving bowl. Arrange the oranges, toasted almonds, goat cheese and radishes on top. Sprinkle the top lightly with a pinch or two of cinnamon. Set aside.
  • In a small bowl, combine the olive oil, lemon juice, honey and salt. Whisk together until blended. Taste, and add a little more honey if it's unpleasantly tart.
  • Once you're ready to serve, drizzle the dressing lightly over the salad (you might have a little extra), toss, and serve immediately.

ORANGE AND RADISH SALAD

Categories     main-dish

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 6

1 bunch large red globe radishes
4 large navel oranges
2 tablespoons freshly squeezed orange juice
1 1/2 teaspoons orange-flower water*
1 teaspoon confectioners' sugar
1 teaspoon freshly squeezed lemon juice

Steps:

  • Wash the radishes, cut off the green tops and the roots, and grate the radishes into a glass salad bowl. Peel the oranges and segment them, reserving 2 tablespoons of the juice. (Remove all the white pith from the orange with a sharp paring knife and then, holding the orange in one hand, run the knife around each segment inside the membrane. Do this over a small bowl to catch the juice.) Place the orange segments in the bowl with the grated radish. Mix the remaining ingredients and the reserved orange juice together in a small bowl and pour the marinade over the radish and orange mixture. Cover with plastic wrap and set aside for 30 minutes so that the flavors mix. Serve at room temperature.

GREEK SALAD WITH GOAT CHEESE

Greek Salad With Goat Cheese image

This recipe, brought to The Times in a 1991 article about the increasing popularity of goat cheese, is simple and full of bright flavors and satisfying textures. Feta, the cheese traditionally used in this classic salad, would be perfectly appropriate (and delicious), but we recommend giving goat cheese a try. The silken texture of the goat cheese contrasts beautifully with the lively crunch of the vegetables.

ORANGE AND RADISH SALAD

Orange and Radish Salad image

The marriage of radish and orange punches way above its weight as a salad. This version is based on one James Beard collected. Alice Waters, the founder of Chez Panisse, has a recipe, too. So does Paula Wolfert, who dedicated her nine cookbooks to Mediterranean cuisine. Their inspiration came from countless Moroccans who have this salad in regular rotation, often with orange flower water. This recipe leaves it out, opting for a simpler but still refreshing salad that requires careful, precise preparation of the oranges and the radishes to make it shine. If you like, add a pinch of cinnamon to the dressing or sprinkle a bit on top.

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 5

1/3 cup fresh lemon juice (from 2 lemons)
2 tablespoons granulated sugar
Flaky sea salt
4 large oranges (preferably a mix of Cara Cara and navel oranges), peeled, pith completely removed, citrus sliced into rounds, deseeded and chilled, plus fresh orange zest for garnish if desired
1 bunch red radishes, cut into thin matchsticks and chilled

Steps:

  • Combine lemon juice, sugar and ¼ teaspoon salt in a jar. Twist on the lid and shake until the sugar and salt dissolve; chill dressing thoroughly.
  • When ready to serve, simply arrange the orange rounds on a serving dish or individual plates, top with a pretty pile of radish matchsticks and drizzle with the dressing. Grate a bit of orange zest on top, if desired, and serve with the tiniest bit of flaky sea salt for finishing, if you like - but that exact amount is best left to individual diners.

RADISH SALAD WITH GOAT CHEESE

Radish Salad With Goat Cheese image

This is a scrumptious, healthy salad recipe. My mother always had a pickled vegetable salad on our dinner table and radish salad was always part of the rotation. This recipe is from the April 2013 issue of Cooking Light.

Categories     Cheese

Time 5m

Yield 4 serving(s)

Number Of Ingredients 8

4 teaspoons white wine vinegar
1 tablespoon extra-virgin olive oil
1 teaspoon honey
2 cups radishes, cut lengthwise into 1/4 inch wedges (with root and 1/2 inch inch stem left on, I trimmed my radishes)
1 tablespoon chopped fresh oregano (I did not use, food allergy)
4 cups Baby Spinach
2 ounces goat cheese, crumbled (about 1/2 cup)
1/2 teaspoon fresh ground black pepper

Steps:

  • Combine first 4 ingredients in a bowl, stirring well.
  • Add radishes and oregano and toss to coat.
  • Place 1 cup of baby spinach on each of 4 plates.
  • Using a slotted spoon top each plate with 1/2 cup of radish mixture.

  • Drizzle remaining dressing evenly over salad.

Tips:

  • Choose the freshest ingredients: Use radishes that are firm and crisp, with no signs of wilting or bruising. Select oranges that are heavy for their size and have a deep orange color. Use goat cheese that is soft and creamy.
  • Slice the radishes thinly: This will help them to absorb the dressing and marinade better. You can use a mandoline or a sharp knife to slice the radishes.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this recipe. It has a fruity, peppery flavor that will complement the other ingredients in the salad.
  • Let the salad marinate for at least 30 minutes: This will give the flavors time to meld together. You can marinate the salad for up to 2 hours if you have time.
  • Serve the salad immediately: The radishes will start to wilt if they sit for too long. So, serve the salad as soon as you've made it.

Conclusion:

This radish, orange, and goat cheese salad is a refreshing and flavorful dish that is perfect for a light lunch or dinner. The radishes provide a peppery bite, the oranges add a touch of sweetness, and the goat cheese adds a creamy richness. The salad is also very easy to make and can be ready in just 30 minutes. So, next time you're looking for a healthy and delicious salad recipe, give this one a try.
