1 (16 ounce) cinnamon raisin bread
1 quart milk
3 eggs
2 cups sugar
2 tablespoons vanilla extract
1 tablespoon butter
heavy cream

Steps:

  • Preheat oven to 350 degrees.
  • Tear bread into 2" pieces, drop into a large mixing bowl and pour the milk over it.
  • Toss gently until bread is coated.
  • Let bread soak about 15 minutes.
  • In a small bowl, beat eggs together with sugar until mixture is light yellow, smooth and thick.
  • Add vanilla extract and pour this mixture over the milk soaked bread.

3/4 cup brown sugar, packed

2 packets maple brown sugar instant oatmeal
3 large eggs, beaten
3 cups milk
1 teaspoon rum extract
1/2 teaspoon salt
1/4 cup brown sugar
3 1/2 cups raisin bread, cubed
1/2 cup raisins
1 cup apple pie filling
1 cup almonds
1/2 cup cream soda
1 package whipped topping mix
1/2 teaspoon cinnamon
1/2 teaspoon rum extract
1/4 teaspoon salt

Steps:

  • In a blender, grind instant oatmeal into a fine powder. Set aside.
  • In a large mixing bowl, whisk together eggs, milk, rum extract, salt, and brown sugar. Fold in raisin bread, raisins, pie filling, almonds and oatmeal powder until bread cubes are moist. Set aside for 1 hour.
  • Spray slow cooker with cooking spray and add the bread mixture. Cook on high setting for 2 hours or until a knife inserted in center comes out clean.
  • To make the sauce, combine all ingredients in a bowl. Whisk together until thickened. Top bread pudding with a dollop of sauce.

4 cinnamon raisin English muffin (about 1/2 lb)
1/2 cup raisins
3 eggs
1 -1 1/4 cup milk
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1 pinch ground cloves
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon vanilla extract
1/4 cup rum or 1/4 cup Bourbon
1 tablespoon white sugar

Steps:

  • Split English muffins, then cut into small pieces (I cut each in 4 strips, then turned 90° and cut in 4 again). Place in bowl with raisins.
  • In a large measuring cup, beat eggs. Add enough milk to make 2 cups total liquid. Add brown sugar, spices, vanilla and rum, and combine thoroughly. Pour over bread cubes.
  • Preheat oven to 350°F Allow bread to soak for 15 minutes while oven preheats. Meanwhile, spray a 1.5-qt souffle dish with non-stick spray. Place souffle dish on cookie sheet to catch any spillover.
  • Pour bread mixture into souffle dish. Sprinkle with white sugar, and bake in preheated oven 60 minutes. Allow to cool 5 minutes before serving.

3 large eggs
2/3 cup sugar
4 cups whole milk
1 1/2 teaspoon vanilla extract

4 ounces semi-sweet chocolate, chopped
Unsalted butter for preparing the pan

  • To make the custard, whisk the yolks, eggs, and half of the sugar together in a large bowl. In a medium saucepan, whisk together the remaining sugar, milk, vanilla, salt, and nutmeg, then bring to a boil. Place the gratin dish in a larger baking dish and place on the rack. Pour enough hot water into the baking dish to reach halfway up the gratin dish. Bake the bread pudding until just set, but still wiggle-y, about 40 minutes. Remove from the oven and cool completely before serving.
