FRESH RASPBERRY ICEBOX CAKE

Fresh Raspberry Icebox Cake image

Layered icebox cakes are so fun because they look impressive but couldn't be easier. Fresh raspberries make this one really special. Use Anna's Ginger Thins to get the scalloped edges, or regular gingersnaps if those are not available. -Elisabeth Larsen, Pleasant Grove, Utah

RASPBERRY LEMON ICEBOX CAKE

Raspberry Lemon Icebox Cake image

Icebox cake is already easy, but this one is the easiest! Lemony whipped cream and fresh raspberries layered with graham crackers and chilled until perfect - it's the quintessential no-bake summer dessert.

Provided by Kare for Kitchen Treaty

Time 15m

Number Of Ingredients 5

3 cups heavy whipping cream (very cold)
1/4 cup granulated sugar
2 tablespoons lemon zest + 2 tablespoons fresh lemon juice (from about 2 medium lemons)
3 sleeves graham crackers (8 double crackers each)
1 pound fresh raspberries

Steps:

  • Add whipping cream to the bowl of a stand mixer fitted with the whisk attachment, or add to a large bowl and use the whisk attachments on a hand blender. Or whisk by hand, if you're feeling up to it! Whip cream on medium speed until it begins to thicken. Add sugar and lemon juice and continue whipping until soft peaks form. Don't whip until very stiff; it makes the cake too difficult to assemble! With a spatula or wooden spoon, fold in the lemon zest.
  • Smear a little whipped cream on the bottom of a 9-inch x 13-inch baking dish. This will help to hold the first layer of graham crackers in place. Lay a single layer of graham crackers over the whipped cream, breaking a few apart if necessary to make them fit. Add 1/3 of the whipped cream to the graham crackers and smooth. Top with 1/3 of the raspberries - if they're large ones, I like to break them in half first. Top with another layer of graham crackers, another 1/3 of the whipped cream, and another 1/3 of the raspberries. Then add the remaining graham crackers and spread on the last of the whipped cream. Top decoratively with remaining raspberries.
  • Carefully cover with plastic wrap and refrigerate for at least 4 hours, up to 36 hours.
  • Remove from fridge, cut into squares, and serve.

Yield 8 servings

Number Of Ingredients 6

2 1/2 cups heavy cream
6 ounces cream cheese, softened
1 cup confectioners' sugar
Zest and juice of 1 lemon
1/2 pint fresh raspberries
24 packaged gingersnaps

Yield Makes 6 servings

Number Of Ingredients 9

27 Nabisco Famous Chocolate Wafer Cookies
2 ounces bittersweet chocolate, melted and slightly cooled
1 envelope unflavored gelatin
3 tablespoons cold water
One 12-ounce bag frozen raspberries
3/4 cup sugar
2 cups heavy cream, chilled
2 tablespoons framboise (raspberry liqueur)
1 teaspoon vanilla extract

Steps:

  • 1. Line a 9 1/2 x 4 x 3-inch loaf pan with plastic wrap, making sure the wrap is tucked into all the corners and there is at least 1 inch overhanging the top of the pan on all sides. Working with one cookie at a time, spread the more rounded side of 9 of the wafer cookies with a thin layer of melted chocolate and place 3 of them, chocolate side down, on the bottom of the pan. Place another 3 cookies against each long side of the pan, chocolate-coated sides facing the pan. Place the pan in the freezer.
  • 2. Sprinkle the gelatin over the cold water in a small bowl and let soften for 2 minutes.
  • 3. Combine the raspberries and sugar in a medium-size heavy saucepan and cook over medium-low heat, stirring a few times, until the sugar dissolves and the mixture is warm to the touch. Stir in the gelatin mixture. Let cool to room temperature, stirring occasionally.
  • 4. Combine the heavy cream, framboise, and vanilla in a large bowl and, using an electric mixer, whip until stiff peaks form. Gently fold in the cooled raspberry mixture, taking care not to deflate the cream.
  • 5. Remove the pan from the freezer. Pour all but one-fourth of the mousse into the pan. Smooth the top with a rubber spatula. Insert the remaining 18 wafers into the mousse, arranging them vertically in three rows of six so they are lined up with the chocolate wafers on the sides of the pan. Spread the remaining mousse over the wafers and smooth with the spatula. The pan should be full to the top. Cover with plastic wrap and freeze until completely set, overnight and up to 1 week.
  • 6. To unmold, gently tug the plastic wrap that lines the pan to loosen the cake. Place a serving platter over the pan and turn over. Gently tap to release. Carefully peel the plastic from the cake. Cut into slices and serve immediately.
