RED CABBAGE AND FRUIT SLAW

Red Cabbage and Fruit Slaw image

I grabbed this from an 'Easy Home Cooking' booklet I found at my mother's place on my last visit. It sounded good and I am always happy to find a slaw recipe that doesn't include raw onion since I dislike raw onion so much. When I made this I used fat free mayo and splenda and it worked great. I really liked the colours in the dish. Cooking time includes chilling time.

Tips:

  • Choose the right cabbage: Red cabbage is the traditional choice for this slaw, but you can also use green cabbage or a mix of both. Just be sure to shred the cabbage finely so that it absorbs the dressing well.
  • Use a sharp knife or mandoline: This will help you get thin, even slices of cabbage that will cook evenly.
  • Don't overcook the cabbage: Cabbage should be tender-crisp, not mushy. Cook it for just a few minutes, or until it is bright green and slightly wilted.
  • Use a good quality Roquefort cheese: Roquefort is a strong-flavored cheese, so it is important to use a good quality cheese that has a lot of flavor. Look for a cheese that is creamy and has a sharp, tangy flavor.
  • Make the dressing ahead of time: The dressing can be made up to 24 hours in advance. This will give the flavors time to meld and develop.
  • Serve the slaw chilled: This slaw is best served chilled. You can chill it for at least 30 minutes before serving, or up to 24 hours.

Conclusion:

Red cabbage and Roquefort slaw is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and flavorful side dish, give this slaw a try!
