RED-COOKED FISH WITH TANGERINE PEEL

Red-Cooked Fish With Tangerine Peel image

"Red cooking'' means braising with a strong sauce, one that incidentally is reddish in color. The technique is usually applied to meat but it works well with any firm white fish. If carp is unavailable, a similar fresh fish may be substituted.

Time 45m

Yield 4 servings

Number Of Ingredients 13

1/2 ounce dried tangerine or citrus peel
2 1/2 to 3 pounds carp or other firm, white-fleshed fish like rockfish, cod, halibut, haddock, scrod, red snapper or sole, cleaned and left whole
2 teaspoons salt
4 tablespoons cornstarch
2 cups peanut oil
2 tablespoons finely chopped garlic
3 tablespoons finely chopped peeled fresh ginger
4 tablespoons finely chopped scallions
3 tablespoons rice wine or dry Sherry
1 tablespoon whole-bean sauce (yellow-bean sauce)
2 tablespoons dark soy sauce
1 tablespoon sugar
6 tablespoons chicken stock or water

Steps:

  • Soak the tangerine or citrus peel for 20 minutes in warm water or until it is soft. Rinse under running water, squeeze out any excess liquid, finely chop, and set aside.
  • Make three or four slashes on each side of the fish to help it cook faster and allow the flavors to permeate. Rub the fish on both sides with the salt. Evenly coat each side of the fish with the cornstarch.
  • Heat a wok or deep saute pan until it is hot. Add the oil, and when it is hot, deep-fry the fish on each side for 5 to 8 minutes until it is brown and crispy. (If the head or tail is not submerged in the oil, regularly ladle some of the oil over the exposed parts.) Remove the fish, and drain on paper towels.
  • Pour off most of the oil, leaving 2 tablespoons, and reheat the wok. Add the chopped tangerine peel, garlic, ginger, and scallions and stir-fry for 30 seconds. Put in the rest of the ingredients. Return the fish to the wok, spooning the ingredients over the top of the fish. Cover the wok, and cook over low heat for 8 minutes. When the fish is cooked, carefully remove it to a serving platter, and serve at once.

CANDIED TANGERINE PEEL

Candied Tangerine Peel image

While the bavarian and the caramel sauce flirt subtly with the flavor of the fruit, this candied peel is very direct, delivering a straight shot of sweet-tart tangerine flavor.

Provided by Paul Grimes

Categories     Dessert     Winter     Tangerine     Simmer     Gourmet

Yield Makes about 3 cups

Number Of Ingredients 4

8 tight-skinned tangerines, washed well
2 cups granulated sugar
2 cups water
Superfine granulated sugar for coating

Steps:

  • Remove peel, including a little of pith, from tangerines in (2- by 1-inch) strips with a sharp vegetable peeler (preferably Y-shaped). Cut into thin (1/8-inch) julienne strips.
  • Cover strips with cold water in a medium saucepan and bring to a boil. Drain in a sieve, then repeat procedure with more cold water 2 times.
  • Bring granulated sugar, water, and zest strips to a boil in a heavy medium saucepan, stirring until sugar has dissolved, then simmer until zest is translucent and syrup has thickened, 45 to 50 minutes.
  • Lightly oil a large rack and set over a wax-paper-lined baking sheet. Transfer candied peel to rack with a fork, separating strips. (Discard syrup or reserve for another use.) When peel is cool (but not completely dry), toss with superfine sugar in a bowl to coat. Return to rack until dry to the touch, about 30 minutes.

Tips:

  • Choose the right fish: Firm-fleshed fish like carp, bass, or tilapia work best for this recipe as they can withstand the long cooking time without falling apart.
  • Marinate the fish: Marinating the fish in a mixture of soy sauce, rice wine, ginger, and garlic helps to infuse it with flavor and make it more tender.
  • Use a well-seasoned wok: A well-seasoned wok will help to prevent the fish from sticking and will also impart a nice smoky flavor to the dish.
  • Cook the fish over medium heat: Cooking the fish over medium heat will help to ensure that it cooks evenly without burning.
  • Add the vegetables towards the end of cooking: Adding the vegetables towards the end of cooking will help to preserve their texture and flavor.
  • Serve the fish immediately: Red-cooked fish with tangerine peel is best served immediately, while it is still hot and crispy.

Conclusion:

Red-cooked fish with tangerine peel is a classic Chinese dish that is both flavorful and easy to make. With its combination of sweet, sour, and savory flavors, this dish is sure to please everyone at your table.
