Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 14

1/3 cup plain yogurt
1/3 cup sour cream (can partially replace with more yogurt)
1 (4 ounce) package crumbled feta cheese with dried basil and tomato
1 dash black pepper
1 2/3 cups diced cucumbers
1 1/3 cups seeded chopped tomatoes (romas have few seeds to start with)
1/4 cup chopped olive
3 tablespoons chopped red onions
3 tablespoons hummus
12 small pita pockets, halves
1/4 cup chopped fresh basil
3/4 cup gyros meat (optional)
1 1/2 cups fresh salad greens (not iceberg lettuce)
2 tablespoons olive oil

Steps:

  • Combine first four ingredients until well mixed.
  • stir in cucumbers, tomatoes, olives, and onion.
  • brush pita pockets and toast until warm in toaster oven.
  • generously spread pita pockets with hummus.
  • fill with basil, greens, meat and yogurt mixture.

Tips:

  • Choose the Right Pita Bread: Select fresh, soft pita bread that can easily pocket your fillings. Look for pita bread that is slightly puffy and has a soft texture.
  • Prepare Your Fillings in Advance: To save time during assembly, prepare your fillings ahead of time. This includes cooking any meat, chopping vegetables, and making sauces or dressings.
  • Use a Variety of Fillings: Don't be afraid to experiment with different fillings to create unique and flavorful pita pockets. Some popular options include grilled chicken, roasted vegetables, hummus, feta cheese, and tzatziki sauce.
  • Don't Overstuff the Pita Pockets: Be mindful not to overstuff the pita pockets, as this can make them difficult to eat and may cause the fillings to fall out. Aim for a filling-to-bread ratio that allows you to comfortably fold and seal the pita pocket.
  • Serve Immediately: Red, white, and blue pita pockets are best enjoyed fresh. Assemble them just before serving to ensure that the pita bread stays soft and the fillings retain their flavors and textures.

Conclusion:

Red, white, and blue pita pockets are a delicious and festive way to celebrate patriotic holidays or summer gatherings. They are easy to make, customizable to your preferences, and a great way to incorporate fresh and healthy ingredients into your diet. With a variety of fillings to choose from, these pita pockets offer something for everyone and are sure to be a hit at your next party or picnic.
