Steps:
- Place the rhubarb into a saucepan, and pour in the water. Cover, and bring to a simmer over medium heat. Reduce heat to medium-low, and continue simmering until the rhubarb breaks down and releases its juices, about 15 minutes. Strain the juice, and press the pulp to squeeze out as much liquid as you can. Discard the pulp, and stir the sugar into the hot juice. Refrigerate the syrup until very cold, at least 2 hours.
- To prepare the margaritas, place the ice into a blender, then pour in the tequila and rhubarb syrup. Blend until smooth, or until pureed to your desired consistency. Pour into chilled margarita glasses to serve.

STRAWBERRY RHUBARB MARGARITAS
Steps:
- Combine the Rhubarb Syrup, tequila, lime juice, triple sec, orange juice, mint leaves and some crushed ice in a shaker. Combine in batches, if necessary.
- Place the strawberries in the bottom of 4 margarita glasses. Strain the margaritas over the strawberries.
- Combine 1 1/2 cups water and the sugar in a medium saucepan over high heat. Cook until the sugar is dissolved. Add the rhubarb and cook until slightly softened, about 5 minutes. Remove the saucepan from the heat and steep for 1 hour. Drain the liquid into a small saucepan and cook over high heat until slightly reduced and thickened, about 5 minutes. Transfer the syrup to a bowl. Cover and chill in the refrigerator for about 1 hour.
Tips:
- Choose the right rhubarb: Look for rhubarb stalks that are firm and brightly colored, with no signs of wilting or bruising.
- Prepare the rhubarb properly: Wash the rhubarb stalks thoroughly and trim off the leaves and ends. Cut the stalks into small pieces, about 1-inch thick.
- Use fresh lime juice: Fresh lime juice gives the margarita a brighter, more refreshing flavor. If you don't have fresh limes, you can use bottled lime juice, but the flavor will be less pronounced.
- Chill the ingredients: Chilling the ingredients before making the margarita will help it to be extra refreshing. You can chill the tequila, lime juice, and triple sec in the refrigerator or freezer for at least 30 minutes before using.
- Use a good quality tequila: The quality of the tequila you use will have a big impact on the flavor of the margarita. Look for a tequila that is 100% agave and has a smooth, clean flavor.
- Don't over-shake the margarita: Shaking the margarita too much will make it watery. Shake it just until the ingredients are combined and chilled, about 10 seconds.
- Serve the margarita with a lime wedge and a sprinkle of salt: This is the classic way to garnish a margarita and it adds a nice touch of flavor and visual appeal.
Conclusion:
Rhubarb margaritas are a delicious and refreshing way to enjoy this unique fruit. With their tart and tangy flavor, rhubarb margaritas are perfect for sipping on a warm summer day. So next time you're looking for a new and exciting cocktail to try, give the rhubarb margarita a try. You won't be disappointed.
