RHUBARB ORANGE CUSTARD PIE

Rhubarb Orange Custard Pie image

Once you try this pie it will spoil you for other rhubarb pie recipes. This recipe is from the old Farm Journal pie book from the sixties and is a family favorite. That book had several wonderful recipes. Unfortunately the book was poorly made and disintegrated all too soon. We were thrilled to learn that it had been re-issued but discovered to our dismay that that all of our favorite recipes were gone! We made do by photo copying the remains of the old book and now you get to share in the bounty. By the way NEVER skip the drip pan! This pie will always overflow and it makes a nasty smelly mess on the bottom of the oven if you don't have something to catch it.

ORANGE-KISSED STRAWBERRY RHUBARB PIE

Orange-Kissed Strawberry Rhubarb Pie image

Orange juice and rind add extra flavor to a springtime favorite pie. I came up with this version when I needed to take a dessert to a summer dinner party. I made 2 pies for 8 of us and was lucky to take one piece home. It is one of the best pies I have ever made.

Provided by whodunitrdr

Categories     Desserts     Pies     Fruit Pie Recipes     Strawberry Pie Recipes

Time 1h40m

Yield 8

Number Of Ingredients 12

1 pastry for a 10-inch double crust pie
1 ½ cups white sugar
¼ teaspoon salt
½ teaspoon grated orange peel
¼ cup quick-cooking tapioca
¼ teaspoon ground nutmeg
4 cups rhubarb, cut into 1/2 inch pieces
2 cups fresh strawberries, quartered
¼ cup fresh orange juice
2 tablespoons butter, cut into small chunks
1 tablespoon milk
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Divide the pie pastry in half, roll out half to a round pie crust about 12 inches in diameter, and place the pie crust in the bottom of a 10-inch pie dish. Refrigerate the other half of the pie pastry until needed.
  • Stir the 1 1/2 cups of sugar, the salt, orange peel, tapioca, and nutmeg together in a bowl until well blended. Gently stir in the rhubarb, strawberries, and orange juice, taking care not to crush the strawberries; pour into the prepared pie crust. Dot the filling with butter pieces. Roll the reserved pie pastry out to about a 12-inch circle and place the top crust over the fruit filling.
  • Fold the edges of the top and bottom crust together to seal the two crusts together. Form a rounded indentation in the edge of the pie crust by placing your left index finger against the outer edge of the crust, and pinching the crust against it with the index finger and thumb of your right hand. Move around the edge of the pie, pinching the crust edge against your left index finger to make a fluted crust. Brush milk over the top crust of the pie and sprinkle with 1 tablespoon of sugar. Cut several vent holes in the top crust.
  • Bake in the preheated oven until the filling is thickened and bubbling and the crust has browned, 40 to 50 minutes. Check after 30 minutes of baking time; if the crust edges are browning too quickly, cover them with strips of aluminum foil. Cool the pie before serving.

STRAWBERRY, RHUBARB, ORANGE, HONEY JAM

Strawberry, Rhubarb, Orange, Honey Jam image

This is a take on my original Strawberry/Rhubarb jam recipe, and it is one of the most delicious jams I've made so far! The flavors are amazing - strawberry, rhubarb, orange, and honey, with just a little cinnamon. Super easy to make and you won't be disappointed. This recipe makes 8 half pint jars.

Provided by Lisa Clarice

Categories     Low Protein

Time 1h

Yield 8 8 oz jars, 8 serving(s)

Number Of Ingredients 8

4 cups rhubarb (approx. 2 pounds)
4 cups strawberries (approx. 2 pounds)
1/3 cup lemon juice
2 cups honey (room temp)
1/2 cup orange juice
4 teaspoons orange zest
1/4 teaspoon cinnamon
5 1/2 teaspoons pectin

Steps:

  • Dice rhubarb and place in pan with a little water over medium heat and cook until tender.
  • Slice strawberries in quarters and then mash slightly and add to pan with rhubarb.
  • Add lemon juice and bring mixture to a boil. Reduce eat and cook for about 20-30 minutes. Mixture will start to get thick.
  • Add orange juice, zest, and cinnamon to pan and stir together. Continue cooking.
  • In separate bowl, combine honey and pectin. I use sage honey, but clover would be good as well. You want to use a light colored honey.
  • Add honey/pectin to the jam mixture and stir. Cook for about 5 more minutes.
  • Remove from heat and fill jars to 1/4" of top. Recipe makes eight 8oz. jars.
  • Wipe rims clean and screw on 2-piece lids.
  • Submerge sealed jars into hot water at 200 degrees (or boiling) for 10 minutes. You will hear a "pop" sound once jars are removed from water - that is when the lids are sealed. Let cool on your kitchen counter.

  • Preparation Preheat oven to 400°F with rack in middle. Stir together orange juice, lime juice, and sugar in a bowl. Add rhubarb and let stand, stirring occasionally, 10 minutes. Meanwhile, cut pastry in half lengthwise, then roll out each piece into an 11-by 7-inch rectangle on a lightly floured surface with a floured rolling pin. Arrange pastry rectangles side by side on an ungreased large baking sheet. Make a 1/2-inch border around each pastry rectangle by lightly scoring a line parallel to each edge (do not cut all the way through). Prick pastry inside border all over with a fork. Strain rhubarb mixture through a sieve set over a bowl, reserving liquid. Top 1 pastry rectangle (within border) with half of rhubarb, overlapping slices slightly. Repeat with remaining pastry and rhubarb. Bake until pastry is puffed and golden (underside of pastry should also be golden), about 30 minutes. Meanwhile, boil reserved rhubarb liquid in a small saucepan, skimming foam if necessary, until reduced to about 1/4 cup, 15 to 18 minutes. Transfer tarts to a rack. Brush rhubarb and pastry with glaze and sprinkle with zest.
