I always seem to have rice flour on hand (for Vietnamese and Thai food), and am always looking for ways to use it up. This recipe is from the incomparable Beatrice Ojakangas' "Great Whole Grain Breads" (Simon & Schuster, 1984,1993). The recipe calls for small loaf pans, probably to reduce the baking time. Might be possible to use a large pan, but I haven't tried.

1/3 cup softened butter
2/3 cup sugar
2 eggs
3 tablespoons buttermilk
1 teaspoon lemon extract
2 cups brown rice flour or 2 cups rice flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana
1 cup toasted coconut

Steps:

  • Preheat the oven to 350°F.
  • In a large bowl, beat the butter and sugar until creamy.
  • Beat in eggs, one at a time.
  • Stir in buttermilk and lemon extract and mix well.
  • Combine rice flour, baking powder, baking soda and salt and add to the butter mixture.
  • Stir in bananas and coconut and mix well.
  • Spoon the mixture into two greased mini loaf pans (5 1/2 by 3 inches).
  • Bake 50 to 55 minutes, or until a wooden pick inserted into the center of the bread comes out clean.
  • Cool in pans 2 minutes, then turn out and cool completely.

1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup currants or 1/4 cup raisins
2 eggs
3/4 cup milk
2 ripe bananas, mashed
1/2 cup vegetable oil

Steps:

  • Preheat oven to 325. Grease a 9-inch loaf or round cake pan.
  • Mix rice flour, sugar, baking powder, salt and raisins in a large bowl.
  • Whisk together eggs, milk, mashed bananas, and oil in a separate bowl.
  • Add wet ingredients to dry ingredients, mixing batter thoroughly.
  • Pour batter into prepared pan.
  • Bake for 50 minutes, or until a knife inserted in the center comes out clean.
  • Cool in pan 5 minutes, before turning out on rack to finish cooling.

¾ cup almond milk
1 tablespoon vinegar
1 ¼ cups rice flour
½ cup brown sugar
¼ cup amaranth flour
¼ cup soy flour
¼ cup flax seed meal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon sea salt
2 large bananas, mashed
1 egg, beaten
1 tablespoon coconut oil, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square metal baking dish with margarine.
  • Mix almond milk and vinegar together in a cup.
  • Mix rice flour, brown sugar, amaranth flour, soy flour, flax seed meal, baking powder, baking soda, and sea salt together in a large mixing bowl.

1 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, room temperature
2 cups mashed ripe bananas (4-5 medium)
1 cup sugar
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, baking soda and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil and vanilla. 5 small ripe bananas (4 mashed, 1 sliced down the middle to decorate the top)
250g gluten free plain flour (I used a mix of dove farms all purpose gluten free flour and rice flour)
2 and a half teaspoons of bicarbonate soda
1 and a half teaspoons of ground cinnamon
180g light muscovado sugar
75g unsalted butter, melted
2 large free range eggs
Slice of lemon

Steps:

  • Pre-heat the oven to 180.c and line a loaf tin with grease proof paper.
  • In a large bowl, roughly mash 4 of the bananas, add the sugar, eggs and melted butter and beat together using an electric whisk.
  • Sieve in the flour, bicarbonate of soda and cinnamon and gently fold in.
  • Pour the mixture into the pre-prepared tin.
  • Slice the fifth banana in half and rub the cut side of each half with the slice of lemon to stop it browning, and arrange on top of the cake mix.
  • Bake in the pre-heated oven for 60 minutes until a skewer inserted into the middle comes out clean.
  • Leave to stand for 10 minutes in the loaf tin before taking out and standing on a wired rack to cool completely.
  • Cut into 10 slices and enjoy with a cup of tea.
